Garlic, thyme and oregano give golden baked tofu a generous savory flavor. The edges become lightly crisp while the center stays tender, ready for grain bowls, wraps, salads or a simple vegetable supper.

Ingredients
  

Tofu and Marinade
  • 1 14-ounce block firm or extra-firm tofu drained
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon sea salt
Optional Seasonings
  • ½ teaspoon black pepper optional
  • ½ teaspoon smoked paprika optional
  • fresh lemon juice or zest to finish; optional

Method
  1. Drain the tofu and press for at least 15 minutes to remove excess water. Use a tofu press or wrap it in clean towels under a moderate weight. Mix the marinade while it presses.
  2. Combine the olive oil, garlic, thyme, oregano and salt in a shallow dish. Add the optional black pepper or smoked paprika if desired.
  3. Cut the pressed tofu into slabs about 1/2 inch thick or evenly sized cubes.
  4. Add the tofu to the marinade and turn gently to coat. Let stand for about 10 minutes, or cover and refrigerate overnight for a stronger herb flavor.
  5. Preheat the oven to 400°F (200°C). Arrange the tofu in one layer on a parchment-lined baking sheet. Bake for 25–30 minutes, turning halfway, until golden at the edges. Watch the garlic near the end so it does not scorch.
  6. Serve warm with optional lemon juice or zest. For meal prep, transfer leftovers to shallow containers and refrigerate within two hours; use within 3–4 days.

Notes

Timing: The total includes 15 minutes of pressing and 10 minutes of marinating, in addition to hands-on preparation and baking. Some tasks overlap, so the elapsed time may be shorter. Start with already pressed tofu to save time.
Success tips: Keep the pieces evenly sized and leave space on the tray. This lightly crisp herb coating differs from a starch-coated crust.
Herb swaps: Italian seasoning or herbes de Provence can replace the thyme and oregano; check blends for added salt.
Add-ins: Chili flakes add heat and nutritional yeast adds a savory, lightly cheesy note.
Reheating: Heat only the portion needed in a skillet, oven or air fryer until it reaches 165°F; the edges will soften during storage.
Air fryer: Cook at 375°F (190°C) for about 12–15 minutes, turning halfway and checking the garlic and edges early.
Serving: Add to brown rice, grain bowls, roasted vegetables, salads or wraps with tahini sauce, hummus or a plant-based yogurt drizzle.
