Ingredients

Roasted vegetables
  • 1 medium carrot cut into small pieces
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon olive oil Divide between roasting the carrot and sautéing the onion.
Creamy sauce
  • 1 cup raw cashews soaked in the refrigerator for at least 4 hours, then drained
  • 1 ½ cups vegetable broth Reserve a little cool broth for the arrowroot slurry.
  • 1 tablespoon arrowroot starch
  • 2 tablespoons tomato paste
  • ¼ cup nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon mustard powder Or Dijon mustard.
  • ½ teaspoon ground turmeric
  • ½ teaspoon smoked paprika
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper
Pasta and optional finish
  • 12 ounces vegan elbow macaroni dry; Use egg-free pasta; gluten-free option in Notes.
  • fresh parsley or chives chopped; Optional finish.
  • vegan breadcrumbs or chopped cashews Optional topping.

Equipment

  • Small baking sheet
  • skillet
  • Blender
  • Saucepan
  • pasta pot
  • colander
  • whisk

Method

  1. Heat the oven to 400°F (200°C). Toss the carrot with some of the measured oil and spread on a small baking sheet. Roast for about 20 minutes, until tender with lightly browned edges; continue longer if needed.
  2. While the carrot roasts, heat the remaining measured oil in a skillet over medium heat. Cook the onion for 6–8 minutes, until soft. Add the garlic and stir for about 1 minute, without browning it heavily.
  3. Reserve a small splash of cool broth for the starch. Blend the drained soaked cashews, roasted carrot, onion and garlic with the remaining broth, tomato paste, nutritional yeast, lemon, vinegar, mustard, turmeric, paprika, salt and pepper until completely smooth. Scrape down and blend again if the sauce feels gritty.
  4. Whisk the arrowroot into the reserved cool broth until smooth. Pour the blended sauce into a saucepan and warm over medium-low heat. Whisk in the slurry and cook gently for 3–5 minutes, stirring, until the sauce lightly coats a spoon. Avoid a long hard boil.
  5. Meanwhile, cook the dry macaroni in boiling water according to its package directions, until just tender. Save a little pasta cooking water, then drain.
  6. Fold the warm pasta into the sauce. Add a little reserved pasta water if needed for a coating that flows between the elbows. Taste and adjust the seasoning.
  7. Spoon into bowls and add any optional herbs or crunchy topping just before serving. The sauce thickens as it stands, so bring it to the table while creamy.

Notes

Soaking and timing: Soak the cashews in the refrigerator for at least four hours before starting; this is included in the 4-hour45-minute total. The cooking estimate assumes roasting, sautéing and pasta cooking overlap. Vegetables: Carrot is the selected source option; cauliflower would make a different sauce. Starch: Mix arrowroot with cool liquid first and heat gently. Pasta: Gluten-free egg-free macaroni can be used, with broth, mustard and toppings checked for gluten-free suitability too. Texture: Save pasta water to loosen the sauce. Storage: Refrigerate promptly for three to four days. Reheat gently with a splash of water until hot throughout, reaching 165°F (74°C). Optional breadcrumbs and cashews are added separately and are not included in the base nutrition estimate.
