Ingredients
  

  • 1 cup rolled oats
  • 1 cup cashew milk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon finely grated lemon zest
  • 1 tablespoon pure maple syrup
  • ½ cup fresh raspberries plus more for serving if desired

Method
 

  1. Stir the rolled oats, cashew milk, lemon juice, lemon zest and maple syrup together in a covered container until evenly combined.
  2. Cover and refrigerate for at least 8 hours or overnight, until the oats are tender and the mixture is thick and creamy.
  3. Stir the chilled oats, divide between two servings, and top with the fresh raspberries. Add a small splash of cashew milk if you prefer a looser texture, then serve chilled.
