Notes
Concurrent cooking. Start the brown rice first, then prepare the roasting tray while it simmers. Allow 35–40 minutes simmering and five minutes covered resting for the rice. The listed 45-minute cooking estimate covers that sequence while vegetables roast for 30–35 minutes. Spread vegetables in one layer; use two trays if one would crowd them.
Roasting cues. Pat chickpeas dry, slice carrots thinly and spread mushrooms and beans well. Stir halfway. Look for tender carrots, browned mushrooms and lightly crisp chickpeas rather than very dry chickpeas. Maple can darken quickly; check before the end of the range and move browned pieces if necessary.
Tahini sauce. Whisk the tahini, maple, vegan gluten-free Dijon, lemon and salt with two tablespoons water, adding up to the listed four tablespoons as needed for a drizzle. Tahini can initially thicken when liquid is added; keep whisking before deciding it needs more water.
Additions, swaps and serving. Parsley or cilantro, pumpkin seeds or hemp hearts, and avocado are optional finishes. Sweet potatoes can replace carrots, yellow onion can replace red, and white or cannellini beans can replace chickpeas. Size and moisture change roasting time. Cucumber-tomato salad, asparagus, orange slices or mixed greens make optional sides.
Alternate appliances. Try air-frying the vegetables and chickpeas in batches at 390°F for 12–15 minutes, shaking halfway; this replaces only the roasting stage. For pressure-cooker rice, use one cup brown rice with 1 1/4 cups water, 22 minutes high pressure and ten minutes natural release. Follow your model’s minimum-liquid requirements and release instructions.
Meal prep and storage. Refrigerate rice, vegetables and sauce separately within two hours and use within 3–4 days. Reheat rice and vegetables thoroughly to 165°F (74°C), then add sauce and fresh optional toppings. A splash of water can loosen refrigerated sauce.
