Ingredients

Bowls
  • 1 medium eggplant about 1 lb, cut into 3/4-inch cubes
  • 1 15-oz can chickpeas, drained, rinsed and very thoroughly dried
  • 2 tbsp neutral oil divided
  • ½ tsp fine sea salt divided
  • ¼ tsp freshly ground black pepper
  • 1 cup uncooked jasmine rice
  • 1 ½ cups water for rice
Miso-maple glaze
  • 2 tbsp white miso certified gluten-free
  • 1 ½ tbsp pure maple syrup
  • 1 tbsp certified gluten-free low-sodium tamari
  • 1 tbsp rice vinegar
  • 1 tbsp freshly grated ginger
  • 1 small garlic clove finely grated
  • 2 tbsp warm water
Fresh finish
  • ½ English cucumber diced
  • 2 scallions thinly sliced
  • 1 tbsp fresh lime juice
  • 2 tsp toasted sesame seeds
  • 1 lime cut into wedges

Equipment

  • 2 rimmed sheet pans
  • Small saucepan
  • whisk
  • medium pot for rice

Method

  1. Heat oven to 425°F. Line two rimmed pans with parchment. Pat eggplant pieces dry, toss with 1 tablespoon oil, 1/4 teaspoon salt and pepper, and spread on one pan.
  2. Dry chickpeas thoroughly with a clean towel. Toss with remaining oil and salt, then spread on the second pan with space between them.
  3. Roast eggplant for 25–30 minutes and chickpeas for 25–35 minutes, shaking each pan once, until eggplant edges caramelize and chickpea skins look dry and crisp. Do not roast until the centers of the eggplant are leathery.
  4. Meanwhile rinse rice until water runs mostly clear. Bring rice and 1 1/2 cups water to a simmer, cover and cook on low for 12 minutes. Remove from heat and rest covered for 10 minutes, then fluff.
  5. Whisk miso, maple syrup, tamari, vinegar, ginger, garlic and warm water until smooth. Warm gently in a small saucepan for about 1 minute; do not boil hard.
  6. Toss the roasted eggplant and chickpeas with enough warm glaze to coat. Combine cucumber, scallions and lime juice separately so they stay crisp.
  7. Divide rice into four bowls, pile on glazed vegetables, add cucumber mixture, scatter sesame seeds and serve with lime wedges.

Notes

Crispy chickpeas: Dry them until their surfaces feel nearly matte and spread them out. Steam trapped on the pan prevents the edges from crisping; add the glaze only at the end.
Eggplant texture: Cut fairly even 3/4-inch pieces. Eggplant should be creamy inside with browned edges, not shriveled all the way through; check it a few minutes before the chickpeas.
Miso choice: Use white or mellow miso for a rounded savory glaze, and verify gluten-free labeling. Darker miso will make the finish saltier and more robust, so taste before adding more tamari.
For a rice-free plate: Serve the warm roasted mixture with crisp shredded cabbage or cooked millet. Serving the topping without rice changes the nutrition estimate.
Make ahead: Cook rice, prepare glaze and chop cucumber up to a day ahead; refrigerate separately. Roast chickpeas close to serving for the best contrast.
Storage and reheating: Refrigerate cooked components within 2 hours and use within 3 days. Reheat rice and eggplant until steaming, crisp chickpeas briefly in the air fryer or oven, and add cucumber cold.
