- Put the frozen berries, coconut milk, maple syrup, vanilla, lemon juice and salt in a high-speed blender. Use its tamper as directed by the manufacturer or pause to scrape the sides; never insert utensils while the blades run.
- Blend just until smooth and thick, pausing rather than overworking a stalled machine. Taste for the balance of fruit, sweetness and lemon.
- If using chia seeds, cinnamon or lemon zest, blend or stir them into the berry mixture. The seeds give a more textured result.
- Serve immediately as a soft frozen dessert, or transfer to a freezer-safe container and freeze for about 2–3 hours, until firm enough to scoop.
- Let the container stand briefly before scooping, usually 5–10 minutes after a short freeze. Longer or overnight freezing makes it harder, so allow more softening time as needed. Divide into four portions.

Notes
Texture: This is an unchurned berry-and-coconut dessert. Fruit water can form ice crystals, and it becomes firm after prolonged freezing; do not expect commercial ice cream texture.
Timing: The 190-minute planning estimate allows a three-hour freeze; softening adds time and depends on container depth and freezer temperature.
Sweetener: Maple syrup balances tart berries; adjust the flavor to the fruit you use.
Swaps: Frozen cherries or mango make a different fruit version; sweetness and water content vary.
Add-ins: Mint, cocoa or nut butter can bring another flavor, added separately; they change texture and nutrition.
Chia: Optional seeds absorb liquid and add a slight texture, rather than being necessary for the recipe to set.
Storage: Cover tightly and keep frozen; best texture is during the first week. Soften only the portion needed and keep the remainder frozen. Do not reheat.
