  • ½ cup fresh cilantro
  • 2 green onions thinly sliced
  • 1 small mango thinly sliced
  • 1 tablespoon hemp hearts Optional.
Ginger-Lime Dipping Sauce
  • ¼ cup tahini
  • 2 tablespoon lime juice
  • 1 tablespoon gluten-free tamari Coconut aminos is an alternative; changes flavor and sodium.
  • 1 tablespoon maple syrup
  • 1 teaspoon fresh grated ginger
  • 1 small garlic clove
  • 2-4 tablespoon warm water as needed

Equipment

  • baking tray
  • parchment
  • Saucepan
  • colander
  • mixing bowls
  • whisk
  • shallow wrapper dish
  • clean board
  • knife

Method

  1. Heat the oven to 400°F (200°C). Press the tofu for at least 15 minutes, pat dry and slice into thin strips. Mix the tofu tamari, ginger, maple syrup, rice vinegar and garlic powder, then gently coat the tofu. Arrange on a parchment-lined tray and bake for 25 minutes, turning halfway, until lightly golden.
  2. Toss the julienned cucumber with its rice vinegar, maple syrup, salt and sesame seeds. Refrigerate or keep cool while it stands for at least 15 minutes. This is a fresh quick pickle, not a shelf-stable preserve.
  3. Cook the rice noodles as their package directs. Drain, rinse under cold water and separate them gently. Prepare the carrots, avocado, cabbage, spinach, mint, cilantro, green onions and mango so all the filling is ready before wetting a wrapper.
  4. Whisk the tahini, sauce lime juice, sauce tamari, maple syrup, ginger and finely grated garlic until smooth. Add warm water gradually within the stated range until creamy and suitable for dipping.
  5. Fill a shallow dish with water at the temperature recommended on the wrapper package. Briefly wet a wrapper, usually about 8–10 seconds, and lay it on a clean damp board or towel. It should continue softening on the work surface rather than becoming limp in the water.
  6. Put a modest portion of spinach, noodles, carrots, cabbage, mango, avocado, herbs, green onion, drained pickled cucumber and tofu in the center. Add optional hemp hearts if using. Fold in the sides and roll firmly but gently; leave enough empty wrapper to seal without tearing.
  7. Repeat with the remaining wrappers and filling to make 10 rolls. Serve with the ginger-lime sauce. Keep rolls separate or lightly covered so they do not dry out or stick together.

Notes

Yield: 10 rolls; nutrition is per one roll with an equal share of the dipping sauce, excluding optional hemp hearts. Two or three rolls can make a lunch portion, depending on accompaniments.
Gluten-free: Verify rice wrappers, noodles and tamari labels.
Rolling: Overfilling is the usual cause of tearing; use slightly less filling in the first roll until you know the wrapper.
Swaps: Pineapple or strawberries can replace mango with a sharper, juicier finish; drain extra juice before rolling. Radish, jalapeño or baked shiitake mushrooms can be added separately.
Quick pickle: Keep refrigerated and use promptly; this vinegar mixture is not a canning method.
Storage: Best freshly made. Refrigerate covered promptly at 40°F (4°C) or below and use within 24 hours, with sauce separate. A lightly damp covering inside a lidded container helps the wrappers stay supple. Serve cool; do not reheat assembled rolls.
