Smoky red-brown tofu crumbles with golden edges on a wheat-colored plate.

Smoky Marinated Tofu Crumbles

No ratings yet
Small, uneven pieces of tofu soak up a smoky tomato-tamari marinade, then turn deeply golden in a hot pan. The edges grow a little chewy, the centers stay tender, and suddenly there’s a savory spoonful ready for tacos, grain bowls or pasta. Give the crumbles time to brown before stirring and let texture do some of the work.

Ingredients

  • 14 ounces extra-firm tofu
  • 2 tablespoons low-sodium tamari
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon tomato paste
  • 1 tablespoon olive oil for marinade
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground black pepper
  • 1 pinch red pepper flakes optional
  • 1 tablespoon olive oil for pan

Equipment

  • tofu press or clean kitchen towels
  • Large pan or potshallow marinating dish
  • large skillet
  • spatula
  • mixing bowl
  • measuring cups and spoons

Method

  1. Drain the tofu and press for at least 20 minutes. Longer pressing, up to 30 minutes, adds time.
  2. Whisk the tamari, vinegar, maple syrup, tomato paste, marinade olive oil, paprika, garlic powder, onion powder, cumin, pepper and optional chili flakes in a bowl.
  3. Break the pressed tofu into small, uneven crumbles without mashing it into a paste. Fold into the marinade and leave for at least 30 minutes, or refrigerate overnight.
  4. Heat the pan oil in a wide nonstick or seasoned skillet over medium heat. Add the marinated tofu, spread out and cook for 15–18 minutes, stirring occasionally, until golden at the edges and pleasantly chewy. Work in batches if needed and add that time.
  5. Divide into four portions and serve in tacos, bowls, wraps or pasta, or cool promptly in shallow containers for later meals.

Notes

Oil and timing: There is 1 tablespoon oil in the marinade and a separate 1 tablespoon in the pan; both are included in the base recipe. The minimum 78-minute total includes 20 minutes pressing and 30 minutes marinating. Longer pressing, overnight marination or batches add time.
Baked variation: Spread marinated crumbles on a parchment-lined tray at 375°F (190°C) for 25–30 minutes, stirring halfway, until browned. The pan oil is not required for this variation; nutrition and timing change.
Air fryer variation: Spread in a single layer at 375°F (190°C) for 12–15 minutes, shaking halfway. Work in batches as needed and watch the edges. The separate pan oil is omitted.
Flexible flavor: Rice vinegar can replace balsamic for a sharper finish; coconut sugar or agave can replace maple. Finely chopped cooked mushrooms or sun-dried tomatoes add savory depth. A 16-ounce tofu block also works with the same marinade, with a milder coating and different nutrition.
Allergens: Contains soy. Coconut aminos can change the sauce flavor but cannot make a tofu recipe soy-free. Choose gluten-free tamari and verified packaged ingredients where needed.
Storage: Refrigerate promptly at 40°F (4°C) or colder for 3–4 days, or freeze up to 2 months for best quality. Reheat to 165°F (74°C).
