Sweet Potato Slaw with Tahini–Lime Dressing

No ratings yet
Fine orange sweet potato matchsticks, purple cabbage and carrot make a wonderfully crunchy slaw with a creamy tahini–lime dressing. Scallions and cilantro keep it bright, while optional roasted sunflower seeds add a little toastiness. Cut the vegetables finely, toss gently and bring a colorful bowl to the table.

Ingredients

Slaw
  • 2 medium sweet potatoes scrubbed, peeled and very finely julienned; raw orange-fleshed sweet potatoes
  • 1 cup red cabbage finely shredded
  • 1 cup carrot shredded
  • 3 green onions thinly sliced
  • ½ cup fresh cilantro chopped
Optional finish
  • ¼ cup roasted sunflower seeds optional; add just before serving
Tahini–lime dressing
  • 3 tablespoons tahini stirred well
  • 2 limes juiced; use juice only
  • 1 tablespoon pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon gluten-free vegan Dijon mustard
  • ½ teaspoon garlic powder
  • sea salt and black pepper to taste
  • 2 tablespoons water plus up to 2 tablespoons more as needed

Equipment

  • Vegetable peeler
  • sharp knife or julienne peeler
  • cutting board
  • large bowl
  • small bowl
  • whisk
  • measuring cups and spoons

Method

  1. Wash your hands and rinse all produce under running water. Scrub the sweet potatoes before peeling. Cut them into very fine matchsticks with a sharp knife or julienne peeler; if spiralizing, cut the strands into manageable lengths. Thick raw batons will be too firm for this slaw.
  2. Put the sweet potato, cabbage, carrot, green onions and cilantro in a large bowl. Toss gently to distribute the colors and separate any clumps of shredded vegetables.
  3. Whisk the tahini with the juice of the two limes, maple syrup, vinegar, Dijon and garlic powder. It may thicken at first. Whisk in 2 tablespoons water, then add up to 2 tablespoons more a little at a time until creamy and pourable. Taste for salt and pepper.
  4. Pour the dressing over the vegetables and toss thoroughly until lightly coated. Taste and adjust seasoning. Serve immediately for the freshest crunch, or refrigerate for 15–30 minutes if you prefer a slightly softer slaw.
  5. Add the optional roasted sunflower seeds just before serving. Divide among four portions and serve cold alongside a vegan burger, a rice bowl or grilled tofu if desired.

Notes

Fine cuts: Use orange-fleshed sweet potatoes, not ordinary potatoes or true yams. Very fine raw matchsticks give a crisp bite; thick strands are hard to chew. A julienne peeler is a useful alternative to a spiralizer.
Dressing and allergens: Contains sesame from tahini and mustard from Dijon. Check tahini, mustard and other packages for vegan, gluten-free and household allergen suitability. Lime size and tahini thickness vary, so add water gradually.
Variations: Parsley can replace cilantro. A little julienned apple, raisins or dried cranberries adds another sweet note. Almond or cashew butter changes the dressing flavor and adds a tree-nut allergen. These variations change nutrition.
Storage: Refrigerate promptly in a covered container at 40°F (4°C) or colder for up to 3 days; the crunch is best freshly made. Store seeds separately. For advance preparation, keep the cut vegetables and dressing in separate covered containers and toss when serving.
Timing and nutrition: The 20-minute estimate excludes the optional chilling. Four servings means one-quarter of the batch. Nutrition excludes optional sunflower seeds, unmeasured seasoning and accompaniments; lime is calculated as juice only.
