Roast the Sweet Potatoes
- Prepare whole potatoes: Preheat oven to 400°F (200°C). Scrub and dry sweet potatoes, keep skins on, prick with a fork, and place on a parchment-lined baking sheet.
- Roast until soft throughout: Roast for 55–75 minutes until skins wrinkle and a knife slides through the centers with no resistance.
- Measure cooked flesh: Cool until safe to handle. Split, scoop and discard skins; measure 2 cups (about 450 g) cooked flesh, mash and cool slightly.
Prepare the Gluten-Free Pie Crust
- Mix dry ingredients: Whisk gluten-free flour, coconut sugar, salt and psyllium powder if needed for the flour blend.
- Cut in butter: Work cold vegan butter into flour with a pastry cutter or fingertips until coarse crumbs remain with a few pea-sized pieces.
- Hydrate dough: Mix apple cider vinegar with 5 tablespoons ice water, then gradually stir into dough. Add up to 2 more tablespoons water only as needed for cohesion.
- Chill and roll: Shape dough into a disk and chill 30 minutes. Roll between parchment sheets to roughly 12 inches wide and 1/8 inch thick.
- Shape and chill pastry: Transfer to a 9-inch pie dish, press and patch cracks, trim and crimp, then chill 15 minutes.
- Partially bake crust: Set oven to 375°F (190°C). Line crust with parchment and weights, bake 15 minutes, remove liner and weights, then bake 7–10 minutes more until the base looks dry and edges start to turn golden.
Make the Velvety Filling
- Reduce oven heat: Set oven to 350°F (175°C).
- Combine ingredients: Put mashed sweet potato, full-fat coconut milk, cornstarch, coconut sugar, maple syrup, optional dark rum, lime juice and zest, cinnamon, ginger, allspice, salt and nutmeg into blender or food processor.
- Blend to velvety smoothness: Blend until completely smooth and glossy, scraping sides. Taste and adjust zest/spices gently; filling should be thick but pourable.
- Fill prepared crust: Pour filling into partially baked pastry, level with a spatula and tap dish gently to release large bubbles.
- Begin baking: Bake for 30 minutes, until the outer portion of the filling begins to set.
Prepare the Walnut Crumble
- Chop walnuts: Finely chop 1/2 cup walnuts into coarse nut meal; roughly chop remaining 1/2 cup.
- Make crumble clusters: Mix walnuts, coconut sugar and salt; cut in cold butter until small irregular clusters form. Refrigerate until use.
Finish Baking
- Add walnut topping: After first 30 minutes baking, remove pie and scatter cold walnut crumble evenly without pressing into filling.
- Finish pie in oven: Bake for another 20–25 minutes, until outer filling sets and center wobbles gently. Walnuts should be fragrant and lightly toasted. Shield crust or crumble loosely with foil if browning rapidly.
Cool, Chill and Serve
- Cool and chill pie: Cool on wire rack about 1 hour, then refrigerate at least 3 additional hours until filling is set.
- Slice and serve: Slice with a sharp knife, wiping between portions. Serve chilled or rest 15–20 minutes at room temperature; optional coconut whipped cream and fresh lime zest go beside slices.

Notes
Roasting the Sweet Potatoes: Roast whole sweet potatoes in their skins until fully tender to deepen sweetness. Use orange-fleshed varieties for the creamiest texture.
Steaming or Microwaving: Peel and cube potatoes; steam until tender or microwave covered with a splash of water. Drain well and let excess moisture evaporate before mashing.
Extra-Silky Filling: Blend thoroughly and pass unusually fibrous puree through a fine-mesh sieve for a refined texture.
Coconut Milk: Full-fat canned coconut milk gives body and richness; avoid thin refrigerated coconut beverages.
Gluten-Free Crust: Use a suitable gluten-free flour blend and verify the packaged vegan butter. For a gum-free blend without a binder, include the listed psyllium. Keep butter cold and add water sparingly.
Coconut Sugar: Finely grind coconut sugar for even distribution in pastry. Coconut sugar and maple syrup remain added sugars.
Lime and Rum: Zest adds citrus aroma without extra liquid; the rum is optional. Baked rum may retain alcohol, so omit for an alcohol-free pie.
Allspice and Nutmeg: Measure the warming spices carefully so they complement rather than dominate the sweet potato.
Walnut Crumble: Chop half finely and half roughly, then add topping after the first 30 minutes of baking so it becomes toasted without burning.
Clean Slices: Cool about an hour, then refrigerate at least three additional hours. Cut with a sharp blade and wipe between portions.
Make Ahead: Roast sweet potatoes up to three days ahead and keep refrigerated. Pastry can be prepared two days ahead or frozen up to two months.
Storage: Cover and refrigerate the baked pie up to four days. Freeze well-wrapped individual slices up to two months and thaw overnight in the refrigerator.
Serving Ideas: Serve chilled or rest 15–20 minutes at room temperature; add optional coconut whipped cream and fresh lime zest beside slices to keep crumble crisp.
