Roasted sweet potato, oats, flax and chia make warmly spiced waffles with tender centers and golden edges. Tahini brings a little richness, while maple and cinnamon make them happy with fruit or a savory pile of mushrooms and greens.

Ingredients

Waffle Batter
  • 2 cup mashed roasted sweet potato
  • 1 ½ cup gluten-free rolled oats
  • ½ cup oat flour
  • 2 tablespoon ground flaxseed
  • 1 tablespoon chia seeds
  • 1 ½ cup unsweetened gluten-free oat milk
  • 2 tablespoon maple syrup Date syrup is an alternative.
  • 1 teaspoon vanilla extract
  • 1 teaspoon aluminum-free baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon sea salt
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon tahini Cashew butter is a milder alternative.
Optional cooking oil
  • avocado oil Optional; a little for brushing the waffle iron.; As desired; unmeasured amount excluded from nutrition.

Equipment

  • Blender
  • waffle iron
  • measuring cups
  • spatula
  • wire rack
  • optional warm oven

Method

  1. Measure the mashed roasted sweet potato. If starting from raw potatoes, roast at 400°F (200°C) for about 45–60 minutes until completely tender, then cool slightly and mash. This roasting and cooling are additional to the 35-minute waffle estimate.
  2. Pulse the rolled oats in a blender to a coarse flour. Add sweet potato, oat flour, flaxseed, chia, oat milk, maple syrup, vanilla, tahini, vinegar, cinnamon, nutmeg, salt, baking powder and baking soda. Blend until smooth and thick.
  3. Let the batter stand for 5 minutes so flax and chia hydrate. Heat the waffle iron thoroughly according to its manufacturer instructions. If needed, lightly brush the cooking surfaces with the optional avocado oil.
  4. Add the amount of batter suitable for the iron without overfilling. Cook about 5–7 minutes per batch until golden and the steam has slowed. Open gently only after the waffle has set; allow longer if it resists lifting.
  5. Lift each waffle onto a wire rack rather than stacking. If desired, keep finished waffles on the rack in a 250°F (120°C) oven while cooking the remaining batter. Make about 8 waffles, depending on iron size.
  6. Serve two waffles per portion. Choose sweet toppings such as berries, maple syrup and vegan yogurt, or savory avocado, cooked mushrooms, greens or smoky beans. Add those separately to suit the meal.

Notes

Timing: The 35-minute estimate starts with roasted mashed sweet potato and an iron that cooks two waffles at once. Roasting from raw adds 45–60 minutes plus cooling; a single-waffle iron adds batches.
Texture: Sweet potato makes a tender, moist center, so thorough preheating and patience before opening matter.
Gluten-free: Use certified gluten-free oats, oat flour and oat milk, and verify packaged ingredients.
Finishes: Optional sweet and savory toppings are serving suggestions and excluded from the batter nutrition.
Tahini: The selected option brings a gentle sesame note; cashew butter is a milder alternative and changes the allergens.
Extra flavor: Orange zest or cardamom can be added separately.
Storage: Refrigerate promptly for up to three days, or freeze cooled waffles individually before packing. Reheat in a toaster or oven until hot throughout, reaching 165°F (74°C) for refrigerated leftovers; a rack helps restore the edges.
