Method
- Peel ripe bananas and slice into coins. Freeze in a single layer on a lined tray for about 6 hours or overnight, until solid; then transfer to a freezer container if making ahead. Use frozen mango and pineapple as well. Already-frozen bananas make the day-of preparation about 10 minutes.
- Place banana pieces in a sturdy food processor with oat milk, vanilla and salt. Pulse in short bursts, stop and scrape with the machine switched off, then process until the crumbly pieces begin turning creamy. Follow the appliance’s limits; a brief pause to soften very hard fruit is better than forcing the motor.
- Add frozen mango and pineapple and pulse, then process until smooth and thick, stopping to scrape as needed. Use only a few additional drops of milk if absolutely necessary. For a high-speed blender, use only its manufacturer-approved tamper and procedure; never put a spoon or spatula into a running machine.
- Serve immediately for thick soft serve, or transfer to a shallow freezer-safe container and freeze for about 20 minutes for a firmer scoop. Divide into four portions, with optional fresh fruit and mint. Longer freezing makes it hard; soften only the amount needed for 5–15 minutes before serving.

Notes
Frozen fruit first: Freeze ripe bananas solid in a loose layer so the pieces separate easily. The 6-hour custom time is preparation in advance; it is not active blending time. Optional 20-minute firming adds time after blending.
Texture: Use a sturdy food processor or a suitable high-speed blender. Begin with just 2 tablespoons milk; excess liquid makes a smoothie. Stop the machine before scraping and follow its motor and frozen-food guidance.
One base, a few variations: Replace the combined 2 cups mango/pineapple with 1 cup strawberries plus 1 cup pitted cherries, or 1 cup peaches plus 1 cup raspberries. These are variations of this same recipe, with different color, flavor and nutrition.
Diet and ingredients: Use plain unsweetened certified gluten-free oat milk and suitable vanilla. Other plant milks may add allergens. Naturally occurring fruit sugars remain; this is not sugar-free. Optional dates, cashew butter or garnishes change the nutrition.
Storage: Freeze covered for best quality within 2 weeks. It freezes hard rather than remaining permanently scoopable. Temper individual portions briefly; avoid repeatedly thawing and refreezing the whole container.
Portions: Nutrition describes four equal portions of the banana–mango–pineapple default, including measured milk, vanilla and salt. Optional finishes and additional blending liquid are excluded.
