Ingredients
  

Citrus Herb Rice
  • 1 cup uncooked jasmine rice rinsed
  • 2 cups water
  • 1 tablespoon extra-virgin olive oil
  • 1 lime juiced
  • 2 tablespoons fresh cilantro chopped
  • ½ teaspoon sea salt
Smoky Black Beans
  • 2 cups cooked black beans drained
  • 1 teaspoon extra-virgin olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • 1 clove garlic minced
  • ½ teaspoon sea salt
  • 2 tablespoons water
  • ½ lime juiced
Roasted Sweet Potatoes
  • 2 medium sweet potatoes diced small
  • 1 tablespoon avocado oil
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • sea salt to taste
Fresh Bowl Components
  • 4 cups romaine lettuce chopped
  • 1 cup purple cabbage shredded
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 4 radishes thinly sliced
  • ¼ cup fresh cilantro chopped
  • lime wedges optional, for serving
Chunky Guacamole
  • 2 ripe avocados
  • 1 lime juiced
  • 2 tablespoons white onion finely diced
  • 1 small jalapeño minced
  • 2 tablespoons fresh cilantro chopped
  • sea salt to taste
Cilantro-Lime Crema
  • ½ cup raw cashews soaked 15 minutes
  • 2 limes juiced
  • 1 cup fresh cilantro
  • 1 clove garlic
  • 1 tablespoon nutritional yeast
  • 2 tablespoons water plus up to 2 additional tablespoons as needed for a pourable consistency
  • ¼ teaspoon sea salt
Smoky Chipotle Mayo-Style Sauce
  • ½ cup vegan mayonnaise use a certified gluten-free brand when serving the recipe as gluten-free
  • 1 chipotle pepper in adobo use a certified gluten-free product when serving the recipe as gluten-free
  • 1 teaspoon maple syrup
  • ½ lime juiced
  • ½ teaspoon smoked paprika
  • pinch sea salt

Method
 

Citrus Herb Rice
  1. Rinse the rice, combine it with the water in a saucepan, bring to a boil, cover, and simmer until fluffy. Fold in the olive oil, lime juice, cilantro, and salt; keep warm.
Roasted Sweet Potatoes
  1. Heat the oven to 425°F. Toss the diced sweet potatoes with avocado oil, chili powder, cumin, smoked paprika, and salt. Spread in a single layer and roast 22–25 minutes, until tender with caramelized edges.
Smoky Black Beans
  1. Heat the olive oil over medium heat, sauté the garlic for about 30 seconds, then add the black beans, smoked paprika, cumin, oregano, salt, water, and lime juice. Simmer 5–7 minutes, until hot and lightly creamy.
Chunky Guacamole
  1. Mash the avocados, then fold in the lime juice, white onion, jalapeño, cilantro, and salt. Keep the mixture chunky for texture.
Cilantro-Lime Crema
  1. Blend the soaked cashews, lime juice, cilantro, garlic, nutritional yeast, 2 tablespoons water, and salt until smooth. Add up to 2 tablespoons more water as needed for a pourable consistency.
Smoky Chipotle Mayo-Style Sauce
  1. Blend or whisk the vegan mayonnaise, chipotle pepper in adobo, maple syrup, lime juice, smoked paprika, and salt until creamy and even.
Assembly
  1. Divide the romaine among 4 bowls. Add rice, black beans, roasted sweet potatoes, cabbage, cucumber, tomatoes, and radishes. Add guacamole, drizzle with both sauces, and finish with cilantro and lime wedges.

Notes

Rice, beans, roasted sweet potatoes and both sauces can be prepared ahead. Keep guacamole separate and mixed with lime juice until serving. You can also prepare the sweet potatoes in an air fryer or the rice in an Instant Pot. Use certified gluten-free chipotle in adobo and vegan mayonnaise when serving the recipe as gluten-free.
Lettuce option: Butter lettuce can replace romaine.
