Ingredients

Corn
  • 6 ears fresh sweet corn husks and silk removed
  • 1 lime cut into wedges
Cashew–lime sauce
  • 1 cup raw cashews
  • ½ cup plain unsweetened gluten-free oat milk
  • 3 tablespoons nutritional yeast
  • 2 cloves garlic roasted as directed
  • 2 tablespoons fresh lime juice
  • 1 teaspoon gluten-free white rice miso
  • 1 teaspoon smoked paprika
  • ½ teaspoon gluten-free chili powder
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper
Finish
  • ¼ cup fresh cilantro chopped
  • 2 tablespoons green onions thinly sliced
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili flakes optional; use less to taste

Equipment

  • grill
  • oven
  • small foil packet
  • heatproof bowl
  • colander
  • High-Speed Blender
  • tongs
  • cutting board
  • sharp knife
  • measuring cups and spoons
  • six suitable corn holders or skewers optional

Method

  1. Cover the cashews with water and soak, refrigerated, for 2–4 hours, then drain and rinse. The planning time allows a 2-hour soak; a longer soak adds time. During that wait, heat the oven to 400°F (200°C). Wrap the two unpeeled garlic cloves in a small foil packet and roast for 20–25 minutes until soft. Cool enough to handle, then squeeze out the softened garlic. No additional oil is needed.
  2. Blend the drained cashews with oat milk, nutritional yeast, roasted garlic, 2 tablespoons lime juice, rice miso, the sauce’s teaspoon smoked paprika, chili powder, salt and black pepper until very smooth. Stop and scrape as needed. Add water a teaspoon at a time only if needed to make a creamy, spoonable sauce.
  3. Prepare a clean grill for medium-high heat, following its safety instructions. Grill the husked corn for 12–15 minutes, turning every few minutes, until the kernels are tender with scattered browned and charred spots. Move to a cooler area if the surface darkens before the corn is tender.
  4. Let the ears cool just enough to handle safely. If serving on sticks, insert suitable corn holders or skewers after grilling, following their instructions. Coat each ear with some of the cashew–lime sauce, then finish with cilantro, green onions, the remaining teaspoon smoked paprika and optional chili flakes. Offer the lime wedges and divide all measured sauce among the six ears.
  5. For a party-style corn bowl, use the same six cooked ears: cool enough to handle, stand each securely and cut off the kernels with a sharp knife. Toss the kernels with the sauce and measured toppings, or serve the sauce alongside. Divide into six equal portions; optional diced avocado or jalapeño makes a different variation.

Notes

Plan the creamy sauce: Soak the cashews for 2–4 hours in the refrigerator and roast the garlic during that wait. The 2-hour custom time plus preparation and cooking is a conservative plan; tasks overlap. Prepared soaked cashews and roasted garlic shorten the day-of work.
Corn shopping: Choose fresh ears with plump kernels and keep them refrigerated until cooking. For an organic or non-GMO purchasing preference, look for a verified package label or ask the grower about the corn being sold. Do not assume certification from appearance or a market setting.
Diet and allergens: Contains cashews and soy from miso. Use certified gluten-free oat milk, rice miso and suitable chili powder for the gluten-free version as written. Check all packaged ingredients for vegan suitability and additional allergens. The sauce does not contain dairy cheese or mayonnaise.
Party variation: The bowl uses the same six ears, rather than adding another batch of corn. It is easier to pass around and eat with a fork. Optional avocado, jalapeño or extra herbs change the finished nutrition. Insert holders after grilling so wooden skewers are not exposed to the grill flame.
Storage: Refrigerate cooked corn and sauce promptly in separate covered containers at 40°F (4°C) or colder for 3–4 days. Reheat corn thoroughly and add sauce and herbs just before serving. Stir the chilled sauce and loosen with a few drops of water if needed.
Portions: Six servings each include one ear and one-sixth of all measured sauce and toppings. Optional chili flakes, extra blending water and added party-variation ingredients are excluded from the nutrition estimate.
