Grilled Street Corn with Creamy Cashew–Lime Sauce

There are some recipes that feel bigger than food. They carry memory, place, season and community all at once. Street corn is one of those recipes. Inspired by the corn on a stick we love at our local farmers market, this recipe brings together sweet kernels, a smoky edge and a generous finish that makes an ordinary ear of corn feel festive.
This vegan version brings creamy cashew–lime sauce, mellow roasted garlic, nutritional yeast, warm spices and fresh herbs to the hot corn. Every layer offers something different. The kernels stay sweet and juicy, the grill adds a little char, and lime keeps the creamy sauce lively.
Serve the ears warm with lime wedges, or cut the same six ears into a party-style bowl that is easy to pass around. Either way, the appeal is the same: humble ingredients treated with care, a little smoke and plenty of room for conversation around the table.

The corn is the heart of it
Choose fresh ears with plump kernels, and keep them refrigerated until you are ready to cook. Freshness and variety shape the sweetness and texture. If organic or non-GMO corn is your purchasing preference, look for a verified label or ask the grower about the corn actually being sold. A farmers-market setting alone does not establish certification.
Husk the ears before grilling and turn them every few minutes over medium-high heat. Look for tender kernels with scattered browned and charred spots, rather than a uniformly dark surface. Move the corn to a cooler part of the grill if it colors faster than it cooks. The goal is sweet corn with a smoky edge, not dried-out kernels.
A creamy sauce that lets the corn lead
Cashews make a silky sauce that clings beautifully to the kernels. Soak them in the refrigerator for two to four hours, then drain and rinse before blending. Begin with the measured oat milk and add water only a teaspoon at a time if the blender needs help. A spoonable sauce should coat the corn without burying its grilled flavor.
Roasting the garlic softens its sharpness and creates a mellow depth. Wrap the two unpeeled cloves in a small foil packet and roast them while the cashews soak; once cool enough to handle, squeeze the soft garlic into the blender. Nutritional yeast and white miso bring savory flavor, while smoked paprika and chili powder add warmth.
Fresh lime juice brightens the sauce. Blend until smooth, stopping to scrape as needed, then taste before reaching for more salt. The miso contributes salt of its own. Use plain unsweetened oat milk, certified gluten-free when needed, and suitable rice miso and seasonings. This sauce contains cashews and soy; check the actual packages for any additional allergens.
The little details that make it easy to share
Let the corn cool just enough to handle safely, then coat it while it is still warm. Finish with cilantro, green onions and the remaining smoked paprika. Optional chili flakes add more heat and texture. Insert suitable holders or skewers after grilling, following their instructions, so wooden sticks are not exposed to the flame.
For the party-style bowl, use the same six cooked ears. Stand each securely on a board, cut off the kernels carefully, then toss with the sauce and measured toppings or pass the sauce alongside. You get six portions either way. No second batch of corn is needed, and guests can enjoy it with a fork.
The herbs and heat are forgiving. Chives or parsley can take the place of cilantro, and a little chipotle powder makes a smokier, hotter variation. Optional diced avocado or jalapeño gives the corn bowl a different character. Those additions are choices for another version, rather than extra requirements for this one.
Make room for a relaxed evening
Prepare the sauce ahead if you want to spend less time beside the blender when guests arrive. Keep it covered and refrigerated, then stir and loosen it with a few drops of water before serving. Roasted garlic can be prepared ahead too; cool it promptly and keep it refrigerated until it goes into the sauce.
Refrigerate leftover cooked corn and sauce promptly in separate containers at 40°F (4°C) or colder for three to four days. Reheat the corn thoroughly and add sauce and fresh herbs at serving time. Keeping the components apart gives tomorrow’s corn a much fresher finish.
What makes this recipe special is its joyful simplicity. Sweet corn, smoky char, creamy sauce and bright lime are enough to make a generous platter. Bring it outside on a warm evening, set down the extra lime, and let everyone reach for an ear or a spoonful.

Ingredients
Equipment
Method
- Cover the cashews with water and soak, refrigerated, for 2–4 hours, then drain and rinse. The planning time allows a 2-hour soak; a longer soak adds time. During that wait, heat the oven to 400°F (200°C). Wrap the two unpeeled garlic cloves in a small foil packet and roast for 20–25 minutes until soft. Cool enough to handle, then squeeze out the softened garlic. No additional oil is needed.
- Blend the drained cashews with oat milk, nutritional yeast, roasted garlic, 2 tablespoons lime juice, rice miso, the sauce’s teaspoon smoked paprika, chili powder, salt and black pepper until very smooth. Stop and scrape as needed. Add water a teaspoon at a time only if needed to make a creamy, spoonable sauce.
- Prepare a clean grill for medium-high heat, following its safety instructions. Grill the husked corn for 12–15 minutes, turning every few minutes, until the kernels are tender with scattered browned and charred spots. Move to a cooler area if the surface darkens before the corn is tender.
- Let the ears cool just enough to handle safely. If serving on sticks, insert suitable corn holders or skewers after grilling, following their instructions. Coat each ear with some of the cashew–lime sauce, then finish with cilantro, green onions, the remaining teaspoon smoked paprika and optional chili flakes. Offer the lime wedges and divide all measured sauce among the six ears.
- For a party-style corn bowl, use the same six cooked ears: cool enough to handle, stand each securely and cut off the kernels with a sharp knife. Toss the kernels with the sauce and measured toppings, or serve the sauce alongside. Divide into six equal portions; optional diced avocado or jalapeño makes a different variation.
