Strawberry-Vanilla Crumble Bars with Almond Oat Crust

No ratings yet
Juicy strawberries become a thick, vanilla-scented filling between a moist almond-oat crust and a delicate crumble. Maple syrup and almond butter sweeten and bind the dough, while a little chia and cornstarch help the berry layer slice cleanly after chilling. Lovely for brunch tables, picnics, or dessert with tea.

Ingredients

Almond-oat dough
  • 1 cup certified gluten-free rolled oats
  • 1 cup fine almond flour
  • ½ cup certified gluten-free oat flour
  • ½ tsp baking powder
  • ¼ tsp fine sea salt
  • ⅓ cup smooth almond butter well stirred
  • ⅓ cup pure maple syrup
  • ¼ cup melted refined coconut oil
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened plant milk
Strawberry filling
  • 2 ½ cups finely chopped fresh or frozen strawberries if frozen, do not thaw
  • 2 tbsp pure maple syrup
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 1 tbsp chia seeds
Optional finish
  • 1 tbsp sliced almonds to scatter on crumble before baking
Method water
  • 1 tbsp cool water for cornstarch slurry

Equipment

  • 8-inch square metal baking pan
  • parchment paper
  • Food Processor
  • Small saucepan
  • mixing bowls

Method

  1. Heat oven to 350°F. Line an 8-inch square metal baking pan with parchment, leaving a generous overhang.
  2. Pulse the rolled oats 2–3 times in a food processor to make coarse flakes, not flour. Combine with almond flour, oat flour, baking powder and salt.
  3. In a second bowl whisk almond butter, maple syrup, melted coconut oil, vanilla and plant milk. Combine with dry ingredients until a moist crumb forms that holds when pressed. If powdery, add 1 teaspoon milk.
  4. Press about two-thirds of the mixture firmly into the pan in a level layer. Bake 12 minutes until just beginning to set around the edge. Reserve remaining dough for topping.
  5. Meanwhile combine strawberries, maple syrup and lemon juice in a saucepan over medium heat. Cook 6–8 minutes until berries soften and release juices. Mash lightly. Whisk the cornstarch with 1 tablespoon cool water and stir into the berries. Simmer 1 minute until thick. Remove from heat and stir in vanilla and chia; cool 5 minutes.
  6. Spread warm but not steaming filling over the prebaked crust. Crumble remaining dough loosely over the filling; sprinkle with sliced almonds if using. Bake 24–28 minutes until the crumble turns golden and the filling bubbles at the sides.
  7. Cool completely in the pan for at least 60 minutes, then refrigerate 30 minutes before lifting out and cutting into 9 squares with a sharp knife, wiping the blade between cuts.

Notes

For neat bars: The filling needs to cool and set before cutting. A short chill is a texture step, not merely a serving preference.
Moist crust: Use well-stirred smooth almond butter, press the base firmly and add a teaspoon of plant milk only if the mixture fails the squeeze test.
Frozen berries: Cook directly from frozen and allow a little longer for the extra moisture to evaporate before thickening.
Sweetness: Taste the strawberry filling before adding cornstarch. Tart berries may welcome an extra teaspoon of maple syrup.
Storage: Store chilled in a covered container for up to 4 days, with parchment between layers. Freeze individual bars for up to 2 months.
Allergens: Contains almonds. Certified gluten-free oats and oat flour are needed for gluten-free preparation.
Nutrition is estimated for one of nine bars, including the listed almond topping and two tablespoons plant milk. Extra sweetener or milk added during texture adjustments is not included; brands and portions vary.
