Strawberry-Vanilla Crumble Bars with Almond Oat Crust

Ripe strawberries tumble into a ruby filling scented with vanilla, tucked between a tender almond-oat base and a golden, nubbly crumble. These cheerful bars slice neatly after cooling and offer just the right contrast of jammy fruit, gentle sweetness, and buttery-tasting plant-based crumbs.

A little strawberry sunshine
When strawberries soften into a gleaming ruby filling and the kitchen smells of toasted almonds and vanilla, a simple bar becomes something worth sharing. These have the comforting, nubbly top of a crumble and the neat, handheld shape of a bakery square. The fruit remains the star, its bright flavor gently balanced with maple rather than buried beneath heavy sweetness.
The secret is a base that holds together
Gluten-free baking deserves as much attention to texture as flavor. Almond flour brings richness, oat flour adds gentle structure, and just-pulsed oats make the crumb interesting without leaving a dry, sandy bite. Almond butter acts as a binder, while a little melted coconut oil helps the base set. The dough should clump in your hand before you press it into the pan.
Let the strawberries become their own filling
Fresh berries vary enormously in juiciness. A few minutes on the stove make the filling more predictable than spooning raw fruit between layers. Cornstarch thickens the released juices, and chia takes up a little more moisture as the bars cool. The result should be jammy and spoonable rather than thin or watery before it reaches the oven.
Why patience matters for the prettiest slice
It is tempting to lift a gorgeous warm pan straight onto a cutting board, but the crumb will be tender and the fruit still fluid. Cooling, followed by a brief chill, gives both layers time to settle. For clean slices, lift by the parchment handles and wipe a sharp knife between cuts. A small effort rewards you with pretty pink squares that hold for a picnic or dessert plate.
Delicious little variations
Strawberries and vanilla are lovely on their own, but lemon zest can add a lively note, and a few raspberries can replace part of the fruit for a tangier bar. If nuts are not suitable, this particular formula needs redevelopment rather than a one-for-one flour swap: almond flour and almond butter are both important to its structure. Enjoy chilled, or let a bar stand briefly at room temperature for a softer crumb.

Ingredients
Equipment
Method
- Heat oven to 350°F. Line an 8-inch square metal baking pan with parchment, leaving a generous overhang.
- Pulse the rolled oats 2–3 times in a food processor to make coarse flakes, not flour. Combine with almond flour, oat flour, baking powder and salt.
- In a second bowl whisk almond butter, maple syrup, melted coconut oil, vanilla and plant milk. Combine with dry ingredients until a moist crumb forms that holds when pressed. If powdery, add 1 teaspoon milk.
- Press about two-thirds of the mixture firmly into the pan in a level layer. Bake 12 minutes until just beginning to set around the edge. Reserve remaining dough for topping.
- Meanwhile combine strawberries, maple syrup and lemon juice in a saucepan over medium heat. Cook 6–8 minutes until berries soften and release juices. Mash lightly. Whisk the cornstarch with 1 tablespoon cool water and stir into the berries. Simmer 1 minute until thick. Remove from heat and stir in vanilla and chia; cool 5 minutes.
- Spread warm but not steaming filling over the prebaked crust. Crumble remaining dough loosely over the filling; sprinkle with sliced almonds if using. Bake 24–28 minutes until the crumble turns golden and the filling bubbles at the sides.
- Cool completely in the pan for at least 60 minutes, then refrigerate 30 minutes before lifting out and cutting into 9 squares with a sharp knife, wiping the blade between cuts.
