There comes a point in almost every meaningful change when we begin to realize that we are not simply choosing something new.

That is where becoming vegan can become much more interesting than simply removing meat, dairy and eggs from a grocery list.
It can become an exploration of biology, evolution, psychology, nutrition, habit, compassion, sustainability, consciousness and choice.
It can also become an opportunity to understand something extraordinary about the human body:
It is constantly rebuilding itself from the materials we give it.

You Are Literally Made From What You Eat
“You are what you eat” sounds like one of those phrases that has been repeated so many times that we hardly hear it anymore.
Biologically, however, there is something rather remarkable hiding inside it.
The food you eat is broken apart through digestion into smaller molecules and compounds. Proteins become amino acids. Carbohydrates become sugars that can be used for energy or stored. Dietary fats become fatty acids and other lipid components. Vitamins, minerals and thousands of plant compounds enter metabolic pathways throughout the body.
Those materials participate in building and maintaining cell membranes, enzymes, neurotransmitters, hormones, connective tissue, muscle, bone and blood.
Food does not simply pass through you.
Some of it becomes part of you.
And because the human body is continuously turning over cells, proteins and tissues, nutrition is not merely something happening alongside your biology. Nutrition becomes one of the raw-material systems through which your biology continually maintains itself.
That does not mean eating a blueberry somehow turns a cell into a blueberry cell.
It means that your body takes the molecular building blocks available to it and performs something much more sophisticated: it disassembles them, sorts them, transforms them and uses what it needs.
Perhaps one of the most beautiful things about eating plants is realizing how many transformations occurred before that food ever reached you.
Sunlight became chemical energy. A plant used carbon dioxide, water and minerals to grow. Roots interacted with soil and microorganisms. Leaves captured light. Flowers became fruit. Seeds accumulated proteins, fats and minerals capable of supporting another generation of life.
Then you ate it.
And another transformation began.
Evolution Did Not Give Us One Menu
There is an understandable temptation on every side of the dietary conversation to say, “Humans were designed to eat this.”
The evolutionary story is much more interesting.
Human beings evolved as extraordinarily adaptable eaters. Our ancestors consumed different foods depending upon geography, climate, season, technology and availability. Plants were enormously important throughout human evolution, while animal foods also became part of the diets of many ancestral populations. Human digestive anatomy and metabolism reflect this dietary flexibility rather than the physiology of either a strict carnivore or a specialized herbivore.
We are omnivorous in the biological sense that we possess the ability to obtain nutrition from both plant and animal sources.
But being able to eat something is not the same question as asking what dietary pattern best serves us today.
Evolution is not a nutrition prescription.
Natural selection favors traits that help organisms survive and reproduce within particular environments. It does not sit down and design the perfect lifelong menu for preventing cardiovascular disease at 72, protecting biodiversity, minimizing greenhouse-gas emissions and helping billions of people live sustainably on one planet.
We get to ask those questions now.
And this is where human evolution becomes particularly exciting.
Our greatest dietary adaptation may not be a particular tooth, intestine or enzyme.
It may be our flexibility.
We learned to cook. We learned to cultivate. We learned to ferment. We learned to preserve. We learned to combine ingredients. We learned to supplement nutrients. We learned nutrition science.
Evolution gave us adaptability.
What we do with it is becoming increasingly our choice.
Can the Human Body Thrive Without Animal Foods?
For adults, modern nutrition science says appropriately planned vegan dietary patterns can be nutritionally adequate and can provide long-term health benefits.
That word planned matters.
A vegan diet is not automatically a healthy diet.
French fries can be vegan. Soda can be vegan. Cookies can be vegan. A collection of highly refined starches, oils and packaged foods can technically contain no animal products while offering very little of what makes a whole-food plant-rich diet remarkable.
So perhaps the most useful question is not: Is this vegan?
It is: What is this giving my body?
What Does a Human Body Actually Need?
The body does not have a biological requirement for steak, chicken, cow’s milk or eggs as foods.
Nor does it have a biological requirement for lentils, tofu or kale specifically.
It has requirements for nutrients.
It needs adequate energy. Essential amino acids. Essential fatty acids. Vitamins. Minerals. Water.
And although fiber is not digested by our own human enzymes in the traditional sense, it plays enormously important roles in gastrointestinal and metabolic health and feeds members of our intestinal microbiome.
A thoughtful vegan diet therefore asks a better question than, “What do I remove?”
It asks: Where will everything I need come from now?
Protein can come from beans, lentils, peas, soy foods, nuts, seeds, whole grains and other plant foods.
Calcium can come from calcium-set tofu, fortified plant milks, certain greens, beans, tahini and other foods.
Iron is abundant in legumes, tofu, seeds, whole grains and greens, although plant iron is non-heme iron and is generally absorbed less efficiently than heme iron. Vitamin C eaten with iron-rich plant foods can improve absorption.
Omega-3 alpha-linolenic acid can come from flaxseed, chia seeds, hemp seeds and walnuts, while algae-derived DHA and EPA offer a direct vegan source of longer-chain omega-3 fatty acids.
Vitamin D can come from appropriate sunlight exposure, fortified foods and supplements. Iodine can be supplied through appropriately iodized salt or other reliable sources. Zinc is available in legumes, nuts, seeds and whole grains, although bioavailability deserves attention.
And then there is vitamin B12.
B12 deserves special treatment because a reliable source is essential in a vegan diet. Fortified foods and appropriately dosed supplements give us a predictable solution.
Becoming vegan should never require pretending nutritional vulnerabilities do not exist.
Knowledge gives us the freedom to solve them.
Plants and Animals Package Nutrition Differently
One of the fascinating differences between plant and animal foods is not simply which nutrients they contain, but how those nutrients arrive.
Animal foods can provide highly bioavailable protein, B12, heme iron and—in certain foods—long-chain omega-3 fatty acids, calcium and other nutrients.
Whole plant foods bring a different package.
They can provide protein, minerals, vitamins and healthy fats while also delivering dietary fiber and an enormous diversity of phytochemicals.
Fiber is particularly important because it reaches the large intestine, where microorganisms can ferment some types into compounds including short-chain fatty acids such as acetate, propionate and butyrate.
This gives us another way of thinking about food.
You are not feeding only yourself.
You are feeding an ecosystem living within you.
Is Vegan Food Really Easier to Digest?
Sometimes.
But not always.
This is an area where the real science is much more useful than the slogan.
A piece of ripe fruit is different from a fatty, protein-dense meal. A bowl of well-cooked lentils is different from a huge raw salad. Nuts are different from juice. Tofu is different from beans. Highly processed vegan food is different from whole plant food.
Meal size, fat content, fiber, food structure, cooking, individual digestive health and the microbiome all influence digestion.
High-fiber plant foods may actually feel more difficult to digest when someone first begins eating significantly more of them. Gas and bloating can increase because intestinal microbes are fermenting carbohydrates that may previously have been eaten in smaller quantities.
That does not necessarily mean the food is harming you.
It can mean the digestive ecosystem is encountering a dramatically different substrate.
Instead of going from very little fiber to enormous bowls of raw vegetables and beans overnight, increase legumes, whole grains, vegetables, fruit, nuts and seeds progressively. Drink adequate fluids. Cook foods appropriately. Chew. Give your gastrointestinal system time to adjust.
There is no prize for shocking your intestines into veganism.
Raw Food and Cooked Food Are Not Enemies
Another idea worth releasing is that raw automatically means nutritious and cooked automatically means depleted.
Nature is much more nuanced.
Heat can reduce certain heat-sensitive nutrients. Vitamin C, for example, can be lost through prolonged cooking, particularly when food is boiled and cooking water is discarded.
Yet cooking can also make some nutrients more accessible.
Heating, chopping, pureeing and cooking can soften or rupture plant structures and improve bioaccessibility for some compounds. Cooking also changes texture, improves palatability, increases access to energy from some foods and makes many foods safer.
So the beautiful answer is not raw or cooked.
It is raw and cooked.
Enjoy berries and salads. Roast tomatoes. Steam greens. Simmer beans. Bake sweet potatoes. Blend fruit. Toast seeds. Cook mushrooms. Make soup. Ferment vegetables.
A thriving plant-based kitchen does not need one ideology of preparation.
It needs diversity.
What About “Toxin Load”?
The word toxin has become so common in wellness culture that it can sometimes mean almost anything we do not want in the body.
Science requires us to be more specific.
The body already possesses extraordinarily sophisticated systems for processing and eliminating compounds it does not need. The liver chemically transforms many substances. The kidneys filter blood and regulate what is excreted in urine. The gastrointestinal tract eliminates waste. The lungs remove carbon dioxide. Skin protects us and participates in normal excretory processes.
We do not need to “detox” these organs with a particular juice.
We can, however, support the body by reducing unnecessary exposures and giving those systems the nutrients and conditions required to function normally.
A whole-food plant-rich diet can reduce exposure to some dietary components associated with poorer health outcomes, particularly when it replaces processed meat, excessive saturated fat and highly processed foods. At the same time, a vegan label does not protect someone from excessive sodium, alcohol, added sugars, environmental contaminants or heavily processed foods.
The goal does not need to be fear of toxins.
The goal can be creating an internal environment in which the body has what it needs and less of what it does not.
Your Body Is Designed to Repair
Your body is performing repair work right now.
DNA damage is being detected and repaired. Proteins are being replaced. Cells are turning over. Immune cells are monitoring tissues. Wounds are healing. Bone is remodeling. The intestinal lining is renewing itself.
Your body is not waiting for you to discover the perfect diet before it begins healing.
Repair is part of being alive.
It is tempting to say that if the body spends less energy digesting food, it can redirect that energy toward healing. Scientifically, the relationship is not quite that simple. Digestion does require energy, but the body does not operate with a little battery that must choose between “digest” and “heal.”
Something more interesting happens.
A dietary pattern can influence blood lipids, blood glucose regulation, blood pressure, body composition, gut microbial metabolism, nutrient availability and inflammatory pathways. Those conditions can influence the biological environment in which maintenance and repair occur.
That gives us a more empowering way to think about healing.
You are not commanding the body to heal.
You are helping create conditions in which its existing biological intelligence can do its work.
Food Changes the Mind Too
Food and mind are not separate systems.
The brain requires glucose, amino acids, fatty acids, vitamins, minerals and countless metabolic processes to function. The gastrointestinal tract communicates bidirectionally with the nervous system. Gut microorganisms produce metabolites that can interact with human physiology. Blood glucose patterns, nutrient deficiencies, sleep, inflammation and overall metabolic health can all influence how we feel.
But there is another layer that belongs not to nutritional biochemistry but to psychology.
Meaning changes our experience of food.

So instead of asking whether eating a carrot raises your vibration by some measurable number, we can ask something far more useful:
What kind of world am I practicing when I eat?
If you desire compassion, does your food reflect compassion?
If you desire sustainability, does your food participate in sustainability?
If you desire vitality, are you consistently giving your body the materials that support vitality?
If you desire abundance, does your plate feel abundant—or does your idea of veganism feel like a long list of everything you have lost?
There is a profound difference between:
I can’t eat that anymore.
and
Look at everything I get to discover now.
One creates an experience of deprivation.
The other creates an experience of expansion.
And while science may describe that difference through psychology, reward learning, expectation and behavior rather than attraction or vibration, the practical invitation can remain beautifully similar:
Practice the reality you want to live.
The Energy We Participate In
For some people, veganism eventually moves beyond nutrition altogether.
It becomes a question of relationship.
An animal is not simply a collection of protein, fat, iron and calories.
It is a living organism.
For many animals, particularly vertebrates and increasingly recognized groups of invertebrates, there is compelling evidence of complex sensory and behavioral capacities. Questions about animal sentience, suffering and welfare therefore become part of the ethical landscape of food.
A person can approach this spiritually and ask: What energy do I want to participate in?

Another can approach it environmentally: What food system can the Earth reasonably sustain?
And another can simply say: I love animals and no longer want to eat them.
These pathways do not have to compete.
Sometimes many roads lead toward the same table.
What Happens When Billions of Meals Become a Planetary System
A hamburger is small.
Billions of people making food choices over decades is not.
Individual meals accumulate into agriculture. Agriculture becomes land use. Land use becomes habitat.
Feed production requires crops. Crops require land, water, fertilizer, transportation and energy. Animals metabolize feed, and only a portion of its energy ultimately becomes food available to humans. Ruminant animals also produce methane. Manure management produces emissions. Agricultural expansion can displace ecosystems.
What looks like a personal choice on a dinner plate therefore becomes something very different when multiplied across populations.
Large life-cycle analyses consistently find that diets lower in animal foods tend to have lower greenhouse-gas emissions and land use, while individual foods and measures such as water use vary.
This does not mean every plant food is environmentally perfect.
Almonds need water. Rice can produce methane. Some foods travel enormous distances. Monocultures can damage ecosystems. Agricultural chemicals can harm biodiversity. Highly processed vegan foods still require factories, packaging and transportation.
Sustainability asks more from us than merely removing animals.
It asks us to keep becoming more conscious about how the entire food system works.
Veganism and the Sustainability of Life
Perhaps this is where veganism becomes much larger than veganism.
Plants matter. Animals matter. Humans matter. Soil matters. Water matters. Pollinators matter. Forests matter. Microorganisms matter. Farm workers matter. Communities matter. Future generations matter.
Sustainability cannot mean protecting one part of life while casually destroying another.

You Do Not Need to Hate Your Old Life to Choose a New One
There can be a strange tendency in transformation to condemn the person we were before we knew what we know now.
There is no requirement to do that.
You ate what you understood.
Your family ate what they understood.
Generations before them ate according to culture, geography, economics, availability and tradition.
There is wisdom in allowing the past to be the past without requiring it to become the future.
You can love the memory of your grandmother’s kitchen while changing what happens in yours.
You can honor a family tradition while allowing it to evolve.
You can remember a meal with love without needing to recreate every ingredient forever.
Growth does not require rejection.
Sometimes it simply requires becoming.
How Your Palate Actually Changes
One of the most encouraging things about changing how you eat is discovering that taste is not fixed.
Your preferences were learned once.
They can continue learning.
Repeated exposure is one mechanism through which unfamiliar foods can become more accepted. Preparation method matters enormously, too.
Foods that once seemed bland can become nuanced. Excessively sweet foods may begin tasting too sweet. Fresh herbs become more noticeable. Acidity becomes interesting. Roasting creates depth. Fermentation becomes fascinating. Mushrooms become savory rather than merely “mushrooms.” Tahini becomes creamy. Lentils stop being a substitute and simply become lentils—which are wonderful in their own right.
The goal is not to spend the rest of your life trying to make a carrot impersonate a chicken.
The goal is to discover how enormous food becomes when plants are allowed to be extraordinary.
A Better Way to Change Your Palate
Start with foods you already love.
If you love tacos, make incredible plant-based tacos.
If you love pasta, learn three spectacular plant-based sauces.
If you love creamy food, explore cashew creams, white bean sauces, blended vegetables and other plant-based techniques.
Then begin expanding.
Try one unfamiliar ingredient at a time. Prepare it more than one way before deciding you dislike it.
Learn what salt does. Learn what acid does. Learn what browning does. Learn what umami does. Learn what texture does.
Use herbs. Toast spices. Caramelize onions. Roast vegetables until their edges become irresistible. Add lemon at the end when a dish tastes flat. Add crunch when everything feels soft. Add something creamy when everything feels dry.
The greatest transition tool may not be discipline.
It may be becoming a better cook.
Don’t Build Your Vegan Life Around Substitution Alone
Plant-based meats and cheeses can make transitions wonderfully easy, and there is nothing inherently wrong with using them.
But veganism becomes much more exciting when the entire cuisine is not organized around recreating animal foods.
Look at the foods humans have already created around plants: Indian dals, Thai curries, Middle Eastern hummus and falafel, Ethiopian lentil and vegetable dishes, Mediterranean bean dishes, Japanese tofu preparations, Mexican beans, corn, squash and salsas, Caribbean rice and peas, Italian pasta and vegetables, Southeast Asian noodle dishes and countless others.
Human beings have been making extraordinary meals from plants for a very long time.
You are not entering a tiny dietary world.
You may discover that you have entered a much larger one.
Let Your Digestive System Come With You
When increasing plant foods significantly, particularly legumes and whole grains, allow your body to adapt.
Increase fiber progressively. Cook beans thoroughly. If whole beans are difficult at first, try lentils, split peas, tofu, tempeh or blended legumes. Soaking, sprouting, fermenting and cooking can alter texture, digestibility and the availability of certain nutrients.
Drink adequate water. Chew. Eat enough.
This last one is surprisingly important.
Whole plant foods are often less calorie-dense than many animal foods and highly processed foods. A huge plate of vegetables can look enormous while providing relatively little energy.
Feeling weak on a poorly planned vegan diet does not prove humans require meat.
Sometimes it proves humans require lunch.
Becoming Vegan Without Becoming Nutritionally Anxious
You do not need to calculate every molecule on your plate.
You do need a few dependable habits.
Build meals around a meaningful protein source. Eat a diversity of vegetables and fruits. Include whole grains and starchy foods according to your energy needs. Eat legumes regularly. Include nuts and seeds. Include reliable sources of calcium. Have a deliberate source of iodine. Include omega-3-rich foods and consider algae-derived DHA/EPA according to your needs. And we can recognize that science and spirituality do not need to be forced into saying the same thing.
Science can tell us about nutrients, digestion, metabolism, microbiology, environmental impacts and health outcomes.
Spirituality can ask us what those discoveries mean to us.
Ethics can ask what our choices mean for another being.
Sustainability can ask what happens when our choices are multiplied by billions.
And our own inner guidance can ask:
Who do I desire to become?
Perhaps becoming vegan is not ultimately about declaring one group of foods good and another bad.
Perhaps it is about becoming increasingly conscious of the relationship between what we consume and what we create.
- What are we creating inside our bodies?
- What are we creating in our minds?
- What are we creating in our homes?
- What are we creating for animals?
- What are we creating in the soil?
- What are we creating in our oceans, forests and atmosphere?
- What are we teaching our children is normal?
- What industries are we sustaining?
- What future are we practicing every time we sit down at the table?
The beautiful thing is that none of these questions requires fear.
They invite possibility.
Your palate can change. Your microbiome can change. Your cooking can change. Your habits can change. Your understanding can change. Your traditions can change. Your relationship with food can change.
And because human beings have always survived through adaptation, perhaps changing is not a rejection of our nature at all.
Perhaps it is one of the most human things we do.
We learn. We experience. We question. We choose.
And then we become.
The question is not simply, “What will I stop eating?”
What kind of life do I want my table to help create?
