Air-Fryer Sweet Potato Wedges with Creamy Lime-Tahini Drizzle

Golden sweet potato wedges emerge from the air fryer with lightly crisp edges and soft, sunny centers. A cool, creamy lime-tahini drizzle makes every wedge feel a little special, while smoked paprika, garlic, and fresh cilantro bring warmth and a fresh, tangy finish.

Sunshine-colored wedges for the whole table
Sweet potato wedges are one of those simple sides that can turn a casual meal into something a little more inviting. Their edges caramelize and deepen in color while the inside remains sweet and tender. Over the top, lime-tahini brings a cool, creamy contrast with enough brightness to keep the dish lively.
What the air fryer does well
Air fryers move hot air around food, which helps exposed surfaces brown without a deep pot of oil. Drying the wedges before seasoning gives that moving air a head start. A little cornstarch encourages the exterior to dry, but it cannot turn a naturally moist sweet potato into a dry potato chip; the goal is beautifully browned, lightly crisp edges.
The basket deserves breathing room
It is far better to make two quick batches than one crowded load. When sweet potatoes overlap heavily, they trap steam and cook more like roasted vegetables in a covered pot. Arrange them in one loose layer, turn halfway through, and test the largest wedge with a fork. A few extra minutes can make all the difference if your potatoes are particularly thick.
A sauce that makes the side feel complete
Tahini and lime can look stubbornly thick at first. Add cold water gradually and whisk; the mixture transforms into a smooth drizzle that coats without feeling heavy. Maple balances lime acidity, garlic provides a small savory kick, and cilantro adds color if you enjoy it. Serve the sauce at the table for people who love to dip.
Make the most of leftovers
For a weeknight bowl, tuck the wedges next to rice, beans, crisp greens, and cucumber. They are also excellent alongside a hearty soup or a sandwich. Store extra sauce separately and revive leftovers in the air fryer rather than microwaving if you want the edges to regain a little texture.

Ingredients
Equipment
Method
- Preheat air fryer to 390°F for 3 minutes. Cut scrubbed sweet potatoes lengthwise into even 1/2-inch-thick wedges, leaving skin on if desired.
- Pat wedges thoroughly dry and toss with cornstarch. Add oil, smoked paprika, garlic powder, salt and pepper; toss to coat.
- Spread half the wedges in the basket without stacking tightly. Air-fry 10–12 minutes, turning at 6 minutes, until browned at the edges and easily pierced at the thickest point. Transfer to a rack and repeat with remaining wedges.
- Whisk tahini, lime juice, maple syrup, garlic and salt. It may seize at first; add cold water a tablespoon at a time until creamy and easily drizzled.
- Let wedges stand uncovered for 2 minutes to release steam. Arrange on a serving platter, drizzle lightly with sauce, sprinkle with cilantro if using, and offer extra sauce and lime at the table.
