Sturdy gluten-free bread soaks up a creamy banana-vanilla custard, then bakes until softly set beneath a golden top. Just before serving, spoon on caramelized bananas in a glossy coconut-sugar and maple sauce, with a hint of dark rum if you like. Toasted pecans bring the perfect contrast to every warm, comforting bite. Entirely plant-based and welcoming enough for brunch or dessert.

Some desserts belong on a cake stand. Others are meant to arrive at the table still warm from the oven, with a spoon ready, a little caramel waiting to be poured, and the happy anticipation of everyone gathering around.

This Bananas Foster Bread Pudding is very much the second kind.

Beneath its beautifully golden top is a tender, banana-scented bread pudding, rich with vanilla, cinnamon, and just a whisper of nutmeg. Warm caramelized bananas tumble over each serving, coated in a buttery maple-coconut caramel that finds its way into all those lovely little pockets between the bread.

Add a scattering of toasted pecans and a scoop of vegan vanilla ice cream, and something wonderful happens. The ice cream begins to melt against the warm caramel, the pecans bring a delicate crunch, and every spoonful offers a little something different.

It feels wonderfully indulgent, yet its beginnings are delightfully simple: a loaf of bread, a few ripe bananas, and familiar ingredients transformed with a little care.

And perhaps that’s one of the loveliest things about cooking. Sometimes the most memorable food begins with the humblest ingredients.

When Bananas Foster Meets Bread Pudding

There are two beautiful dessert traditions at the heart of this recipe.

Bread pudding celebrates the remarkable transformation of day-old bread. What might otherwise be overlooked becomes something soft, comforting, and beautifully golden after soaking in a fragrant custard and baking in the oven.

Bananas Foster brings an entirely different kind of pleasure: ripe bananas warmed in a rich, buttery caramel sauce, traditionally flavored with brown sugar, cinnamon, and rum.

Bring these two ideas together, and the result is a dessert with layers of warmth, sweetness, and texture.

For our Soulful Table version, we’ve given those familiar flavors a plant-based interpretation. Pure maple syrup and coconut sugar create a deep caramel sweetness, full-fat coconut milk contributes silky richness, and a banana-vanilla custard gives the bread pudding its soft, satisfying center without dairy or eggs.

The finished dish is also designed around gluten-free bread, making this a welcoming dessert for more people to enjoy.

Nothing feels missing. Everything has a delicious purpose.

The Beauty Is in the Contrast

A really lovely bread pudding offers more than softness.

There should be little golden corners where the bread meets the heat of the oven, tender pieces in the center that have absorbed the custard, and enough structure that a serving can be lifted from the pan without falling completely apart.

Then comes the caramel.

Its silky texture softens those golden edges just enough, while the sliced bananas bring their own delicate sweetness. Toasted pecans add a satisfying crunch that keeps every bite interesting.

The optional vanilla ice cream adds one final contrast: cool creaminess against the warm pudding and caramel.

Rather than blending everything into one uniform texture, this recipe lets each element shine.

It’s that beautiful combination of soft, golden, creamy, and crisp that makes a simple dessert feel so special.

A Rich, Tender Custard Without Eggs

The heart of this bread pudding is its banana-vanilla custard.

Ripe bananas are wonderfully useful here. Once mashed, they contribute sweetness, moisture, and body, helping create a luscious foundation for the bread.

Unsweetened oat milk keeps the mixture light enough to soak into the bread, while a little full-fat coconut milk brings the richness that makes bread pudding feel wonderfully comforting.

Cornstarch and finely ground flaxseed help the custard set as it bakes. Together with the mashed banana, they provide structure without requiring eggs.

A little melted vegan butter rounds out the flavor, while pure vanilla, cinnamon, nutmeg, and a touch of sea salt give the custard its warm, familiar aroma.

The goal isn’t a firm, cake-like interior. It’s a softly set pudding that feels rich and tender without becoming watery or gummy.

The secret is balance: enough custard to thoroughly moisten the bread, enough structure to help everything hold together, and enough baking time to set the center without drying the edges.

Choosing the Right Gluten-Free Bread

Not every gluten-free loaf behaves the same way, and choosing the right bread makes a meaningful difference.

For this recipe, look for a sturdy gluten-free vegan loaf that can be cut into generous cubes without crumbling. An enriched sandwich bread, a gluten-free vegan brioche-style loaf, or a soft country-style bread with good structure can all work beautifully.

Bread that’s a little dry is actually an advantage.

Fresh, very soft bread may absorb the custard unevenly or break down as it’s mixed. Bread that has had time to lose a little moisture tends to retain its shape better while soaking up all those wonderful banana-vanilla flavors.

If your bread is especially fresh, a brief visit to a low oven can help dry the cubes before assembling the pudding.

Cutting the bread into approximately one-inch pieces is another lovely little detail. The pieces are substantial enough to remain recognizable after baking, yet small enough to soften throughout.

Once the custard is poured over the bread, give everything about 20 minutes to settle and soak.

There’s no need to rush this part. A gentle press now and then helps any exposed pieces absorb the custard, creating a more even texture from top to bottom.

A Golden Top and a Soft, Comforting Center

One of the pleasures of bread pudding is watching the oven work its magic.

At first, the dish is simply a collection of bread cubes nestled together in a creamy custard. As it bakes, the custard thickens and sets, the bread becomes tender, and the top develops little golden peaks.

This recipe begins baking under a loose covering of foil. That gives the center time to warm and set without allowing the exposed bread to brown too quickly.

Removing the foil for the final part of baking lets the surface develop its inviting golden color.

Look for a top that’s lightly browned, edges that have taken on a little color, and a center that appears softly set rather than liquid.

Because gluten-free breads vary in their ingredients and absorbency, those visual cues are more useful than relying on the clock alone.

Once the pudding comes out of the oven, let it rest for 10–15 minutes.

That little moment of patience allows the center to settle and makes the pudding easier to portion. It will still be beautifully warm when it’s time to serve.

And while it rests, there’s just enough time to prepare the bananas.

Let’s Talk About That Maple-Rum Caramel

If the bread pudding is the comforting heart of this dessert, the caramelized bananas are its flourish.

The sauce begins with vegan butter, coconut sugar, maple syrup, and full-fat coconut milk. Gently warmed together, these ingredients form a glossy sauce with a deep golden-brown sweetness.

Cinnamon and a tiny pinch of salt help balance the richness.

The maple syrup brings a familiar, rounded sweetness, while coconut sugar contributes a deeper caramel-like flavor. Coconut milk softens the edges of the sauce, giving it a lovely pourable consistency.

Dark rum is optional, but it offers a classic Bananas Foster flavor note. Just a tablespoon adds depth without turning the sauce into a strongly flavored rum dessert.

For an alcohol-free variation, simply omit the rum and add a touch more vanilla or a little alcohol-free rum flavoring.

There’s no need for flambéing or dramatic flames. The pleasure here comes from the warm, layered flavors and the beautiful caramel coating the bananas.

Keep the heat gentle, allow the sugar to dissolve, and avoid cooking the sauce until it becomes excessively thick.

We want caramel that flows generously over the bread pudding, not a sticky coating that hardens as it cools.

Why We Use Bananas Two Ways

One of the little details that makes this recipe especially lovely is the way bananas appear in two different forms.

The first bananas are ripe, soft, and mashed into the custard. Their job is to create moisture, sweetness, and gentle banana flavor throughout the bread pudding.

The second bananas are slightly firmer.

These are sliced into thick diagonal pieces and gently warmed in the caramel just before serving.

Using firmer bananas for the topping helps them maintain their beautiful shape rather than dissolving into the sauce.

They need only a brief time in the skillet. About 30–45 seconds per side is enough to warm and coat them without allowing them to become overly soft.

The result is a dessert where banana flavor is woven through the pudding itself and celebrated again in those glossy, caramelized slices on top.

Every part of the fruit has its own moment to shine.

Bringing a Little Magic to the Table

This is a wonderful dessert to serve from the baking dish, especially when the occasion calls for something relaxed and generous.

The bread pudding can be portioned while still warm, with the caramelized bananas spooned over each serving.

Let some of the sauce tumble naturally over the sides. There’s no need for perfect symmetry. The beauty of this dessert comes from its inviting textures and the way the caramel settles into the bread.

Finish with a little shower of toasted pecans.

Toasting the nuts before serving brings out their aroma and gives them the crispness needed to contrast with the custard.

For dessert, add a scoop of vegan vanilla ice cream and serve immediately.

The meeting of warm pudding, glossy caramel, and slowly melting ice cream is a particularly lovely finishing touch.

For a beautiful brunch, serve slightly smaller portions with the caramelized bananas and pecans, leaving the ice cream for those who want an extra indulgence.

Either way, this is food that invites people to linger.

Make It Your Own

The lovely thing about a comforting dessert like this is how easily it can be adapted without losing what makes it special.

Prefer to skip the rum? The maple, cinnamon, vanilla, and caramelized bananas provide plenty of flavor on their own.

Need a nut-free version? Simply leave off the pecans and check that the remaining ingredients, especially the bread and plant-based butter, meet your needs.

Want a milder coconut flavor? A rich unsweetened plant-based cooking cream can replace the canned coconut milk, although the finished richness and consistency may vary slightly.

Love extra sauce? Prepare another half batch of the caramel and bring it to the table in a small pitcher so everyone can add a little more.

The heart of the dessert remains the same: tender bread, warm banana flavor, silky caramel, and a little something wonderful in every spoonful.

A Dessert That Welcomes a Little Planning Ahead

One of the nicest things about bread pudding is that you don’t have to prepare every element at the last minute.

The pudding itself can be baked a day ahead and refrigerated after cooling.

When you’re ready to serve, cover the dish and warm it in a 325°F oven for approximately 15–20 minutes, or until heated through.

The caramel sauce can also be made ahead, then gently reheated with a splash of plant milk if it has thickened.

For the prettiest presentation, wait to add the fresh banana slices until you’re ready to serve. This helps them retain their shape and keeps the topping looking inviting.

Refrigerate leftovers in an airtight container for up to three days.

If you’re serving this for a gathering, there’s a certain freedom in knowing most of the work can be completed before everyone arrives.

A warm oven, a skillet of caramelizing bananas, and a few moments for the finishing touches are all that’s needed to bring the dessert together.

When Dessert Becomes an Occasion

There is something especially welcoming about a dessert that arrives warm.

It doesn’t need towering layers or elaborate decorations to feel memorable. Its beauty is in the golden bread, the tender bananas, the rich caramel, and the simple pleasure of serving something made with care.

Bananas Foster Bread Pudding is lovely for a leisurely weekend brunch, a holiday gathering, a cozy dinner with friends, or an evening when a comforting homemade dessert sounds just right.

It also reminds us how much possibility there is in everyday ingredients.

A few ripe bananas become both custard and caramelized fruit. A humble loaf of bread becomes the foundation of something beautiful. A little cinnamon, vanilla, and maple syrup bring everything together.

And then there’s the best part: bringing it to the table.

Warm servings, a spoonful of caramel, perhaps a little melting ice cream, and the kind of delicious moment that’s even better when shared.

Because some of life’s sweetest pleasures are the ones we make room for together.

  • ½ cup full-fat canned coconut milk well stirred
  • 3 tablespoons pure maple syrup
  • 3 tablespoons cornstarch
  • 1 tablespoon finely ground flaxseed
  • 2 tablespoons vegan butter melted
  • 1 ½ teaspoons pure vanilla extract
  • ¾ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ¼ teaspoon fine sea salt
For the Bananas Foster Caramel
  • 3 tablespoons vegan butter
  • ⅓ cup coconut sugar
  • 2 tablespoons pure maple syrup
  • ⅓ cup full-fat canned coconut milk
  • ¼ teaspoon ground cinnamon
  • 1 pinch fine sea salt
  • 2 medium firm-ripe bananas sliced diagonally into thick rounds
  • 1 tablespoon dark rum optional (omit for alcohol-free version)
For Serving
  • ⅓ cup chopped toasted pecans
  • Vegan vanilla ice cream optional

Equipment

  • 8-inch square baking dish
  • Baking sheet
  • mixing bowls
  • whisk
  • Wide skillet
  • spatula
  • measuring cups and spoons

Method

Prepare the Bread Pudding
  1. Prepare the bread and baking dish. Preheat the oven to 350°F (175°C). Lightly grease an 8-inch square baking dish. If using very soft fresh gluten-free bread, spread cubes on a baking sheet and dry them in a 300°F oven for 12–15 minutes before increasing the temperature to 350°F. The cubes should feel lightly dry, not deeply toasted. Day-old bread can usually skip this step.
  2. Make the creamy banana custard. In a large bowl, whisk the oat milk, coconut milk, and cornstarch until smooth. Add mashed bananas, flaxseed, maple syrup, melted vegan butter, vanilla, cinnamon, nutmeg, and salt. Whisk until thoroughly combined and creamy.
  3. Soak the bread. Place bread cubes in the prepared dish. Pour custard evenly over them. Gently fold and press the cubes into the liquid without crushing them. Rest 20 minutes, pressing exposed pieces down occasionally, until the bread absorbs most of the custard but retains structure.
Bake and Rest
  1. Bake until golden and tender. Loosely cover with foil and bake 25 minutes at 350°F. Remove foil and continue baking 20–25 minutes until the top is golden, edges are lightly crisp, and center is softly set with no loose liquid. Rest 10–15 minutes before serving.
Make the Bananas Foster Caramel
  1. Create the maple-coconut caramel. Near the end of baking, melt vegan butter in a wide skillet over medium-low heat. Add coconut sugar, maple syrup, coconut milk, cinnamon and salt. Whisk to a gentle simmer 2–3 minutes until dissolved and glossy. If using rum, take the skillet off the heat while adding it, then return to low heat for about 1 minute. Do not flambé.
  2. Caramelize the bananas. Add diagonally sliced firm-ripe bananas in one layer. Warm about 30–45 seconds per side until lightly softened and glossy with caramel. Do not vigorously stir or mash.
Finish and Serve
  1. Bring everything together. Divide the warm bread pudding into eight portions. Spoon caramelized bananas and sauce over each. Sprinkle with toasted pecans and offer vegan vanilla ice cream, if desired.
