Leafy greens, crisp vegetables and juicy fruit make these rainbow bowls fresh and varied from the first forkful. Cooked, cooled quinoa adds a soft grain texture, avocado brings creaminess, and hemp and pumpkin seeds provide small, nutty bites. The citrus tahini drizzle connects the sweet fruit with the savory vegetables.

This is a bowl to assemble from prepared ingredients, so the stated time begins with quinoa already cooked and safely cooled. The arranging can be as relaxed as you like. Separate clusters make the colors easy to see, while a gentle toss distributes the dressing more evenly.

Build Around Contrast

Use fruit that tastes good on its own and keep the total mix comfortable to eat with the vegetables rather than crowding the bowl.

Pre-cooked quinoa can save both cooking and cooling time, while pre-shredded carrots and cabbage reduce knife work. Fresh mint or basil makes an easy aromatic finish, and microgreens or arugula add a peppery note. A small handful of vegan crackers or kale chips on the side provides another crisp texture without becoming soggy under the sauce.

Citrus Tahini Drizzle
  • 2 tablespoon tahini
  • 1 tablespoon orange juice freshly squeezed
  • 1 tablespoon lemon juice
  • 1 teaspoon maple syrup or date syrup
  • ½ teaspoon fresh ginger grated
  • 1 pinch sea salt
  • 1 tablespoon water use up to 2 tablespoons to thin

Method
 

  1. Whisk the tahini, orange juice, lemon juice, maple syrup, ginger and sea salt until smooth. Add the measured water gradually, then more only as needed for a pourable dressing.
  2. Divide the greens between two bowls. Add the cabbage, carrots, cucumber and cooked, cooled quinoa.
  3. Arrange the avocado, kiwi, apple or pear, and blueberries over the greens.
  4. Scatter over the hemp seeds and pumpkin seeds, then add mint or basil if using.
  5. Drizzle with the citrus tahini dressing and serve promptly. If preparing ahead, refrigerate the components and dressing separately and assemble just before eating.
