Lemony Chickpea and Avocado Wraps with Herbed Tahini

Chunky lemony chickpeas, creamy avocado and crisp vegetables fill these soft wraps, with a parsley tahini drizzle to bring everything together. There is no pan of filling to cook: the texture comes from a fork, a knife and a few well-chosen layers. Each bite has something soft, something crunchy and a little citrus brightness.
This is a useful lunch to prepare in parts. The chickpea mixture and sauce can wait in the refrigerator, while the avocado and final assembly are best left until serving. Keeping the wet and crisp elements separate gives a fresher result than rolling the entire batch several days ahead.

Mash Enough to Make the Filling Cohere
Drain the chickpeas well, then crush them while leaving some pieces intact. The mashed portion holds the lemon juice, oil and seasoning around the larger pieces, making a filling that stays together more easily than whole chickpeas. A fork works for a small batch; a potato masher saves effort for a larger one.
Taste after mixing in the lemon and seasoning. Chickpea brands vary in saltiness, and lemons vary in juice, so the finished mixture is the best guide. Canned chickpeas are a practical shortcut with no soaking or simmering required. If using home-cooked chickpeas, choose tender ones that mash readily and drain away their cooking liquid.
Let Tahini Become the Sauce
Stir the tahini in its jar before measuring so the settled paste and oil are combined. Lemon juice can make the mixture feel thicker at first; continued whisking with water loosens it into a pourable drizzle. Add the measured water gradually, then a little more only if needed.
Parsley gives the sauce a fresh, grassy note. Cilantro can take its place for a more assertive herbal flavor, and a little finely grated lemon zest can add aroma without thinning the sauce. The aim is a drizzle that reaches the chickpeas and vegetables rather than a large puddle that softens the wrap.
Layer for a Better Bite
A flexible wrap is more important than a particular brand or shape. Warm it briefly according to its package directions if it feels stiff, then leave a clear border around the filling. Thin cucumber slices and finely cut carrots are easier to roll than large pieces; dry washed spinach well so it does not add unnecessary moisture.
Avocado contributes creaminess, chickpeas provide plant protein and fiber, and tahini adds sesame richness. Radishes or pickled onions bring a sharper crunch if you would like another accent. Mixed greens can replace spinach. Lettuce cups and tender collard leaves give a lighter, crisper wrapper, although they hold less filling and are more prone to tearing when overfilled.
Finish, Roll and Enjoy
Divide the filling evenly, drizzle lightly, then fold the sides inward before rolling snugly. Cutting each wrap on the diagonal shows the layers and makes it easier to pick up. A few extra herbs on the plate and a small dish of sauce make a simple lunch feel considered without adding much preparation.
Keep the chickpea mixture and tahini sauce refrigerated separately for up to three days. Slice the avocado and assemble close to eating; keep prepared wraps chilled until serving.
