Easy Vegan Hummus

A bowl of hummus can turn a few pantry ingredients into lunch, a snack board or the start of dinner. Chickpeas, tahini, lemon and garlic blend into a creamy spread with enough body for dipping and enough flexibility for sandwiches. This version keeps the ingredient list simple and lets you choose the final texture.
The easiest way to get a smooth result is to add liquid gradually and give the food processor time to work. Scrape the sides so everything returns to the blades, then blend again before deciding more water is necessary. A little patience is more useful than adding a large splash all at once.

Balance the Ingredients Before the Finish
Drain and rinse the chickpeas. Tahini supplies sesame richness, lemon brings brightness, and olive oil rounds out the blend. Start with one garlic clove for a gentler bowl; a second gives a stronger flavor. Because cloves vary in size and intensity, taste before treating more garlic as an automatic improvement.
The default is three tablespoons of tahini. Reducing it to two gives a lighter sesame flavor and a different balance, as described in the notes. Stir the tahini well in its jar before measuring if the oil has separated. A uniform spoonful helps you avoid an unusually oily or unusually dense batch.
Add Water Slowly
Begin processing the chickpeas, tahini, oil, lemon juice, garlic, cumin and a little salt. Stop to scrape down the sides, then add water or reserved aquafaba a tablespoon at a time. The stated two to three tablespoons are a starting range, with the final texture guided by your chickpeas and tahini.
Water loosens the hummus without changing the flavor much. Aquafaba, the chickpea cooking liquid, is an alternative; reserve it before draining if you want to use it. Keep the hummus thick enough to hold a soft swirl. It is easy to loosen a firm dip, but adding too much liquid makes it harder to recover the body.
Simple Enough for Everyday, Pretty Enough to Share
Spoon the hummus into a shallow bowl and sweep the back of a spoon across the top. A little olive oil can gather in the shallow grooves, with paprika or chopped parsley scattered over it. These garnishes are optional. A tidy bowl, fresh vegetables and a variety of shapes on the platter can make the presentation feel generous without changing the recipe.
For a very smooth finish, take a little extra time to blend and scrape rather than rushing to garnish. Perfect swirls matter less than balanced seasoning and a texture that works for the way you plan to serve it. A thicker hummus makes a useful sandwich spread; a slightly looser batch is pleasant for scooping with vegetables.
Build a Meal from the Bowl
Chickpeas contribute protein and fiber, while tahini and olive oil supply richness. Sesame is an ingredient here, so this is not a sesame-free spread. The nutrition estimate is for one-sixth of the batch and excludes optional oil drizzles, garnishes, bread and other accompaniments. The final volume depends on how much liquid you use.
Serve with fresh vegetables, vegan pita or whole-grain vegan bread, or spread it into a sandwich with crisp greens. Canned chickpeas are the main shortcut, making this a quick component to prepare while another dish cooks. For a different chickpea texture at dinner, try the crispy chickpeas and sweet potato wedges with maple-tahini sauce. Refrigerate hummus promptly in a covered container and use within three to four days.

- Place the drained chickpeas, tahini, olive oil, lemon juice, garlic, cumin and a pinch of salt in a food processor. Process until combined, stopping to scrape down the sides.
- With the machine running, add the water or aquafaba 1 tablespoon at a time, starting with 2 tablespoons, until the hummus is as smooth and loose as you like.
- Taste and adjust salt. Process again briefly to combine.
- Spoon into a serving bowl and make a shallow swirl on top. Add a little olive oil, paprika or parsley, if using.
- Serve with fresh vegetables, vegan pita or whole-grain bread, or use as a spread.
