Maple Citrus Vegan Waldorf Salad

A Waldorf-style salad is at its best when every forkful has a little crispness, a little creaminess and something sweet. Apples, grapes and celery bring that fresh crunch here, with toasted walnuts and pecans tucked into a maple-orange cashew dressing.
We love the herbs in this version. Parsley and mint keep the creamy dressing from feeling heavy, and orange gives the fruit a fragrant lift. The maple sweetness belongs to the salad’s character, so taste the apples and grapes before deciding how generously to dress them.
The cashews soak in the refrigerator for two to four hours. The listed total allows the shorter soak; a longer soak or an optional chill adds time. Once the dressing is ready, this is a salad to assemble close to serving so the fruit stays lively.

Keep the Crunch You Came for
Cut the apples shortly before dressing them, and cool the toasted nuts before they meet the fruit. Warm nuts can soften a salad that should feel cool and crisp. A similar size for the apple pieces makes a pleasant forkful, but there is no need to turn an easy lunch into a knife-skills exercise.
Toasting deepens the nuts’ aroma and gives their richness a more distinct flavor. Watch them closely, because their color can move quickly near the end. Let the celery remain recognizably crisp; its gentle savory note gives the sweet fruit a useful companion.
Blend a Dressing That Coats Lightly
Drain the soaked cashews, then blend with the measured orange juice, lemon, maple syrup, vinegar and water until smooth. Cashews provide body and fat, so the dressing can coat the fruit without mayonnaise. Give the blender enough time to lose any sandy texture before adding more liquid.
Add dressing gradually rather than automatically using every spoonful. The fruit should stay visible beneath a creamy coating. If it seems too sweet, consider the overall fruit-and-acid balance before adding another pinch of spice; unmeasured cinnamon and ginger are optional flavor directions, not part of the base estimate.
Make the Easy Version Lovely
Prepare the dressing ahead and keep it refrigerated, then cut and dress the fruit near serving time. Grapes save peeling and bring a juicy contrast to the apples. A crisp pear can take the salad in another direction, although it should also be cut close to serving and will make a softer bite.
Walnuts and pecans can be used in a different balance, but changing one nut does not make this a nut-free dish: the dressing also contains cashews. A few small mint leaves on top and a bed of cool lettuce make a beautiful plate without disguising the salad under a heavy garnish.
A Fresh Companion for Lunch
Nuts contribute fat and some protein, while the fruit and vegetables bring fiber. This is a fruit-and-nut salad, so a simple bean or lentil dish alongside it can make a more substantial lunch. The recipe-card estimate covers the measured salad and dressing, with optional ground spices and lettuce separate.
For another fruit-forward savory bite, try our shaved fennel and apple slaw. It gives crisp apples a more savory companion and a bright dressing, for days when you want a lighter texture.
Save the Dressing, Enjoy the Fruit Fresh
Refrigerate the dressing and prepared salad promptly and use within two days for best quality. Keeping the dressing separate until serving preserves the apples’ texture and lets you choose the amount each time. Stir a stored dressing and loosen it cautiously if it has thickened.
There is no reheating step for this salad. Its pleasure comes from cool fruit, a smooth dressing and nuts that still have a little bite, so assemble only what you expect to enjoy while those contrasts are at their freshest.

Ingredients
Equipment
Method
- Toast the walnuts and pecans in a dry skillet over medium-low heat for 3–5 minutes, stirring, until fragrant. Transfer to a plate and cool before adding to the salad.
- Blend the drained soaked cashews, orange and lemon juices, maple syrup, vinegar, salt, cinnamon and ginger with some of the measured water until smooth. Add the remaining water gradually until the dressing pours easily but still coats a spoon.
- Put the diced apples, halved grapes and sliced celery in a bowl. Add the cooled nuts, parsley and mint.
- Add enough dressing to coat the salad and fold gently. Taste; add a little more lemon or salt if the fruit needs balance. Serve any extra dressing on the side.
- Serve straight away, or cover and chill for 15–20 minutes before serving. Give it a gentle stir after chilling. Add this optional chilling time to the listed estimate.
