An easy supper with vacation energy

This bowl has a wonderful way of changing the mood of a busy weeknight. Creamy coconut rice, warm cumin-scented black beans and juicy browned pineapple arrive at the table with a lively tangle of lime-dressed red cabbage. Every component is simple, but the contrasts make the plate feel generous, colorful and worth sitting down for.

Coconut rice should stay fluffy

Coconut milk brings richness and a quiet sweetness, but it works best alongside water rather than replacing every drop of cooking liquid. Rinse the jasmine rice first, simmer it gently, and leave it covered for a few minutes off heat. A little lime zest stirred through the finished rice keeps the flavor fragrant instead of heavy.

Pineapple changes in a hot pan

A minute or two of uninterrupted contact with a hot skillet encourages pineapple’s natural sugars to brown. The edges deepen in color while the center stays juicy. That warm fruit pairs beautifully with the earthy flavor of black beans and the subtle smoke from paprika. Be patient with the first side of the pineapple instead of stirring constantly.

Keep one thing cool and crunchy

The red cabbage is not a decoration. Lime juice and a whisper of maple create a simple slaw that slices through the warmth of the rice and beans. Mix it while the other components cook and add it at the very end. The shift from warm, creamy rice to cool crunch is what makes this bowl so satisfying.

Build a beautiful bowl any night

Scatter scallions over each serving, offer cilantro separately, and tuck lime wedges around the table so everyone can brighten their own plate. Avocado adds extra richness if desired. Leftovers work well as a packed lunch when the slaw is stored in its own container, ready to bring the freshness back to reheated rice and beans.

Ingredients

Coconut rice
  • 1 cup uncooked jasmine rice rinsed
  • ½ cup full-fat coconut milk stirred well
  • 1 cup water
  • ¼ tsp fine sea salt
  • 1 tsp finely grated lime zest
Pineapple and beans
  • 2 cups fresh pineapple cut into 3/4-inch chunks
  • 1 tbsp neutral cooking oil
  • 1 15-oz can black beans, rinsed and drained
  • ½ tsp ground cumin
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • 2 tbsp water
  • ¼ tsp fine sea salt
Lime crunch
  • 2 cups thinly sliced red cabbage
  • 1 tbsp fresh lime juice
  • 1 tsp pure maple syrup
  • ¼ tsp fine sea salt
Finish
  • 2 scallions thinly sliced
  • 2 tbsp chopped fresh cilantro optional
  • 1 lime cut into wedges
  • 1 small ripe avocado sliced, optional

Equipment

  • medium saucepan with lid
  • Large nonstick skillet
  • Small mixing bowl

Method

  1. Rinse rice in a fine-mesh sieve until the water runs mostly clear. Add it to a saucepan with coconut milk, 1 cup water and salt. Bring to a simmer, stir once and cover.
  2. Cook on the lowest heat for 12–14 minutes until water is absorbed. Remove from heat and rest, covered, for 5 minutes. Fluff gently and fold in lime zest.
  3. Meanwhile toss thin cabbage with lime juice, maple syrup and salt. Massage briefly, then set aside until slightly softened but still crunchy.
  4. Heat a large skillet over medium-high heat with oil. Add pineapple in a single layer and cook 5–7 minutes, turning once, until lightly golden and juicy. Transfer to a plate.
  5. Reduce heat to medium. Add black beans, cumin, smoked paprika, garlic powder, 2 tablespoons water and salt to the skillet. Stir and cook 3–4 minutes until heated through and lightly coated.
  6. Divide coconut rice among 4 bowls, add beans and browned pineapple, then finish with lime cabbage, scallions, cilantro if using and avocado if desired.
  7. Serve promptly with lime wedges. Keep the cool cabbage separate until eating so the rice does not become wet.

Notes

The coconut-rice ratio: Use the stated 1/2 cup full-fat coconut milk plus 1 cup water for 1 cup rinsed jasmine rice. Too much coconut milk can make rice oily or heavy; keep the lid closed during its brief rest.
Pineapple caramelization: Pat fresh pineapple lightly dry and use a wide hot skillet. Let a side color before moving it, and avoid crowding; canned pineapple must be very well drained.
Black bean texture: Gently warm rinsed canned beans with a tablespoon or two of water. They should stay distinct, not break into a dry paste.
A bright slaw: Red cabbage softens slightly with lime and salt but should retain a satisfying crunch. Add it just before serving so the rice keeps its fluffiness.
Allergen and ingredient notes: Coconut milk is a distinct ingredient from shredded coconut; this dish has no coconut shreds. Confirm canned bean and spice labels for any specific dietary requirements.
Meal prep: Store rice, beans and pineapple separately from the slaw for up to 3 days, refrigerating promptly. Reheat rice and beans until steaming and assemble with cold slaw.
