Raspberries soften into a bright, sweet-tart spread with maple syrup, lemon and a little vanilla. Chia seeds thicken the warm fruit as it cools, leaving a softly spoonable jam with lovely berry texture. Make a small batch for toast or tomorrow’s oatmeal, then tuck it into the refrigerator.

A spoonful of this jam is bright with raspberry: sweet at first, pleasantly tart underneath and full of little berry seeds. Lemon keeps the flavor lively, vanilla adds a soft fragrant note and maple syrup brings just enough sweetness to gather it all together. Chia seeds give the cooled fruit a spoonable texture.

This is a small refrigerator batch for the pleasures close at hand: warm toast, a bowl of oatmeal or a little swirl through a vegan dessert. It does not need a preserving day or special canning equipment. A saucepan, a spoon and a clean container are enough, with a little time afterward for the chia to thicken the fruit.

Fresh or frozen raspberries both belong here

Use fresh berries when they are lovely, or unsweetened frozen raspberries when that is what you have. Put them into the saucepan over medium-low heat and let them release their juice. Stir as they soften so the fruit does not catch on the bottom.

Mash gently with a fork or potato masher, leaving as much berry texture as you enjoy. Frozen berries may take a little longer to soften. Look for a juicy, softened mixture rather than following the clock so closely that firm or icy pieces remain.

Taste the berries before the final sweetening

Begin with two tablespoons of maple syrup, then add the lemon juice and vanilla. Taste carefully: a very tart batch may welcome another spoonful of maple, while ripe sweet berries may need no more. The recipe’s nutrition uses the two-tablespoon beginning.

A small amount of lemon zest or cinnamon can take the jam in another fragrant direction. Rose water is another optional idea, used sparingly so it does not cover the raspberries. Make the simple version first if you want the berry flavor to remain the clear center of attention.

Let the chia make a soft set

Take the fruit off the heat before stirring in the chia. Mix thoroughly, then let it stand for five to ten minutes and stir once more. The seeds absorb liquid as the mixture cools, so a loose warm spoonful does not tell the whole story of its finished texture.

Expect a softly thick, seeded spread rather than a clear, smooth jelly. It is lovely spooned over oatmeal, spread on toast or dotted over a bowl of plant-based yogurt. Eight portions means eight equal shares of the finished batch; the recipe does not promise a measured tablespoon yield.

A refrigerator jar, with a short stay

Transfer the jam to a clean shallow container, cool it briefly and refrigerate promptly, within two hours of cooking. Keep it covered at 40°F or colder and use it within three to four days. A clean spoon each time helps keep the little batch pleasant to use.

This chia-thickened formula is not shelf-stable and is not a water-bath canning recipe. Extension guidance on chia in canned jam explains why this chia-thickened mixture belongs in the refrigerator. For a longer pause, freeze small portions for up to two months for best quality and thaw in the refrigerator. There is something very welcome about having just enough berry jam ready for tomorrow’s breakfast.

Ingredients

Jam
  • 2 cups raspberries fresh or frozen; no added sugar
  • 2 tablespoons chia seeds
  • 2 tablespoons pure maple syrup plus up to 1 tablespoon more to taste; extra excluded from nutrition
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pure vanilla extract

Equipment

  • Small saucepan
  • spoon
  • fork or potato masher
  • measuring cups and spoons
  • clean refrigerator container

Method

  1. Put the raspberries in a small saucepan over medium-low heat. Cook for 5–7 minutes, stirring and gently mashing, until the berries release their juice and soften. Frozen berries may need a little longer; use the juicy, softened texture as your guide.
  2. Stir in 2 tablespoons maple syrup, the lemon juice and vanilla. Taste carefully and add up to 1 tablespoon more maple syrup if needed for the berries’ tartness.
  3. Take the saucepan off the heat and stir in the chia seeds thoroughly. Let stand for 5–10 minutes, stirring again once so the seeds distribute evenly. The mixture will become softly thick and spoonable as it cools.
  4. Transfer to a clean shallow container and allow to cool briefly, then cover and refrigerate promptly, within 2 hours of cooking. Allow about 20 minutes total for initial setting and cooling; it thickens further in the refrigerator. Divide the batch into eight portions for the stated serving basis.

Notes

Texture: This is a spoonable berry-and-chia spread with visible seeds, rather than a smooth clear jelly. Mash less for more berry texture. Frozen fruit and juicy berries can give a looser result; give the chia time to hydrate before judging thickness.
Flavor options: A little lemon zest, cinnamon or rose water can add another fragrant note; begin with a small amount and taste. Mashed dates may replace some maple syrup but change the texture. Maple syrup is the vegan default; honey is not used.
Refrigerator preparation: This recipe is not a canning recipe and is not shelf-stable. Use a clean container and utensil, refrigerate at 40°F (4°C) or colder and use within 3–4 days. Do not water-bath can this chia-thickened formula. Freeze portions for up to 2 months for best quality and thaw in the refrigerator.
Serving and nutrition: Eight servings means one-eighth of the finished batch, not a measured tablespoon yield. Nutrition includes 2 tablespoons maple syrup and excludes any additional sweetener, flavor variations and serving accompaniments. Check packaged ingredients for vegan and gluten-free suitability.
