Tender Spiced Pear & Ginger Breakfast Muffins

Warm cinnamon, a gentle sparkle of ginger, and little pieces of ripe pear make these breakfast muffins especially inviting. A soft almond-flour crumb and plant-based yogurt keep them moist, while maple syrup offers rounded sweetness without overpowering the delicate orchard flavor.

A soft little taste of the orchard
There is something especially comforting about the fragrance of pear, cinnamon, and ginger drifting from the oven. These muffins have tender golden tops and soft centers with tiny, juicy pieces of fruit. They are satisfying with breakfast tea, pretty on a brunch platter, and practical to tuck into the freezer for another day.
Two forms of pear, two wonderful jobs
Grated pear spreads moisture and delicate sweetness through the crumb. Finely diced pear gives each bite little pockets of fruit, but large pieces could make the muffins soggy. Keeping both forms small and evenly distributed helps the batter bake consistently, and ripe pears provide more fragrance than hard, underripe ones.
How to make gluten-free muffins tender
Without wheat gluten, muffins need a little extra attention to binding and hydration. A 1:1 gluten-free flour blend supplies starches and a structural binder; almond flour contributes tenderness; flaxseed and yogurt help the crumb hold while staying moist. The recipe is formulated for a flour blend with xanthan gum and cannot be reliably replicated with plain coconut or rice flour alone.
Small moments that improve the bake
Let the flax thicken before you begin and give the finished batter a short rest so the flour can absorb moisture. Stir only until the dry pockets disappear; vigorous mixing is not needed. A toothpick can be misleading if it pierces a piece of juicy pear, so test another spot and look for springy tops as well.
Make your mornings gentler
Bake a tray and freeze individual muffins once completely cool. They warm beautifully and are delicious with a spoonful of plant-based yogurt or a warm drink. The muffins are pleasantly sweet rather than dessert-like, which leaves room for the natural pear and gentle ginger to lead.

Ingredients
Equipment
Method
- Heat oven to 350°F. Line a 12-cup standard muffin pan with liners. Stir ground flax with warm water and leave 8–10 minutes to gel.
- Whisk gluten-free flour, almond flour, baking powder, baking soda, cinnamon, ginger, nutmeg and salt in a large bowl.
- In another bowl whisk maple syrup, oil, yogurt, plant milk, vanilla and the gelled flax until smooth. Fold in grated pear.
- Add wet mixture to the dry ingredients and fold just until no dry pockets remain. Gently fold in diced pear. The batter should be scoopable and thick, not pourable. Let it rest 5 minutes.
- Divide among muffin cups, filling each about three-quarters full. Sprinkle with sliced almonds if using.
- Bake 21–25 minutes until tops spring back lightly, the center is set, and a toothpick in a batter-only section comes out clean or with a few moist crumbs. If pear hits the toothpick, test a second spot.
- Cool in pan 10 minutes, then transfer to a rack. Let cool at least 5 minutes more before unwrapping so the gluten-free crumb sets.
