Slow Cooker Creamy Potato Soup with Smoky Mushrooms

A bowl of creamy potato soup is especially welcoming when the evening turns cool. This version has a gentle thyme-scented base, tender pieces of Yukon Gold potato, and a little richness from coconut milk. Browned mushrooms with smoked paprika bring a savory finish, while fresh chives give the bowl a clean green lift.
The slow cooker handles the long, quiet part of the meal. Cannellini beans blend into the potatoes to give the soup body, and the mushrooms are cooked separately near serving time so their browned edges stay distinct. It is a generous plant-based supper with a small amount of active work spread across the day.

Let potatoes and beans build the body
Yukon Gold potatoes have a naturally creamy character while holding some shape. Cut them into reasonably even cubes so they soften at the same pace. Onion, garlic, thyme, and broth surround them with a simple savory flavor. Canned cannellini beans are already cooked; drain and rinse them before adding to the pot.
The beans contribute both substance and some protein, while the potatoes give the soup its familiar comforting texture. Mashing some of the potatoes and beans directly in the cooker creates a creamy base with pieces left to enjoy. A simple potato masher gives a rustic result with little washing up.
Avoid blending the potatoes continuously into a completely smooth purée. Too much mechanical work can make their starch feel gluey. Stop once the liquid has enough body, keeping some cubes visible. Coconut milk goes in toward the end, and lemon juice lifts the finished flavor after the long cooking.
Give the mushrooms their own moment
Thinly sliced cremini mushrooms brown more effectively in a wide skillet than in the moist soup. Let their released liquid evaporate and give their surfaces time against the pan. Constant stirring can delay that color. If the pan is small, cook in batches rather than crowding every slice together.
Tamari, smoked paprika, and a little maple syrup season the browned mushrooms near the end. The combination is smoky and savory, with just enough sweetness to soften the edges. Add it after browning so the syrup and paprika do not spend unnecessary time in a very hot dry pan.
These mushrooms are a topping in their own right. Their tender chew and browned flavor complement the creamy soup without needing an animal-based ingredient. Keep them separate until serving, then spoon a modest mound into each bowl and scatter the chives over everything.
Plan for your slow cooker’s pace
The recipe gives both High and Low cooking ranges. The total time shown follows the High option; choosing Low makes the day longer and more hands-off. Potatoes should be fully tender before mashing or adding the final ingredients. Appliances differ, so that texture check matters more than the clock alone.
Prepare the mushrooms while the soup finishes. If you have cooked them earlier, rewarm them in a skillet before adding to the bowls. A warm wheat-glaze bowl and a little fresh chive are enough to make the meal feel thoughtfully served. Add a green salad or a suitable bread alongside if you would like more variety.
Cool leftovers promptly in shallow containers and refrigerate for up to three days, keeping the mushrooms separate when practical. Reheat soup on the stovetop until it reaches a rolling boil, stirring so it heats evenly; add a little broth or water if it has thickened. Do not use the slow cooker to bring cold leftovers back to a safe temperature.

Slow Cooker Creamy Potato Soup with Smoky Mushrooms
Ingredients
Equipment
Method
- Place the potatoes, onion, garlic, drained beans, broth, thyme, salt, and pepper in a 5- to 6-quart slow cooker. Stir, cover, and cook on High for 3 1/2–4 hours or Low for 6–7 hours, until the potatoes and onion are completely tender.
- With the cooker still on High, use a potato masher to mash some of the potatoes and beans directly in the pot, leaving plenty of small pieces. Stir in the coconut milk and heat, covered, for 15 minutes. Add the lemon juice and taste.
- During the final 15 minutes, heat the oil in a large skillet over medium-high heat. Add the mushrooms in a broad layer and cook for 8–10 minutes, turning occasionally, until their liquid has evaporated and their edges are browned.
- Reduce the skillet heat to medium. Mix the tamari, smoked paprika, and maple syrup, add to the mushrooms, and toss for 30–60 seconds until glazed. Remove from the heat before the maple mixture catches.
- Ladle the soup into six bowls and divide the smoky mushrooms over the top. Finish with the chives and serve hot.
