Blackberry Lemon Pie with a Splash of Blackberry Liqueur

Some of life’s sweetest rewards require reaching a little farther, wandering a little longer, or occasionally getting tangled in a few thorny branches. Blackberries have a wonderful way of reminding us of that. There is something irresistible about a perfectly ripe blackberry. Deep purple, almost black, and bursting with sweet-tart juice, these beautiful little fruits carry the flavor of sunshine, warm afternoons, and the simple pleasures of the season. Whether gathered from the brambles, discovered at a farmers market, or brought home from the grocery store, blackberries deserve their moment to shine. And what better way to celebrate them than with a homemade blackberry pie? Our Blackberry Lemon Pie with a Splash of Blackberry Liqueur brings together the luscious flavor of ripe berries, the unmistakable fragrance of fresh lemon, and a little spirited sophistication. Nestled inside our Classic Vegan Pastry Crust, the filling becomes a gorgeous, jewel-toned treasure beneath layers of tender, golden pastry. It’s rustic, elegant, wonderfully aromatic, and just a little indulgent. The kind of dessert that makes you want to gather everyone around the table, pour another cup of tea, and linger over one more bite.

Why We Love This Blackberry Pie
Blackberries have such a beautiful complexity. Their natural sweetness is balanced by a pleasant tartness, making them particularly wonderful for baking. Rather than covering up those flavors with excessive sweetness, this pie gives them room to shine. Lemon is the secret to its bright, captivating personality. We’re not adding just a hint. Fresh lemon zest and juice bring a generous burst of citrus that lifts the berries, enhances their fragrance, and gives every bite a wonderfully lively finish. Coconut sugar adds a mellow, caramel-like sweetness that complements the fruit without making the filling overly sugary. A delicate touch of cinnamon introduces a little warmth, while blackberry liqueur or brandy brings an extra layer of aromatic depth. Then there’s the pastry. The contrast between a crisp, beautifully browned crust and a soft, juicy blackberry filling is one of the great pleasures of homemade pie. Each forkful brings together buttery pastry, luscious fruit, fresh citrus, and just enough sweetness to leave you looking forward to the next bite. Nothing needs to be complicated to feel extraordinary.
A Beautiful Balance of Blackberry, Lemon, and a Little Liqueur
This pie starts with ripe blackberries and gives them room to be deliciously themselves. Instead of hiding their fragrance under heavy spice, we layer the fruit with lemon, just enough coconut sugar to round out its tang, and a little cinnamon. A splash of blackberry liqueur or brandy is optional, but it makes the berry-and-citrus aroma feel especially inviting.
Blackberries: The Heart of the Pie
Six generous cups of blackberries create a wonderfully fruit-forward filling. As the berries bake, their juices mingle with coconut sugar and lemon, transforming into a rich, deeply colored sauce that holds the fruit together. Fresh blackberries are lovely when they’re in season, particularly when they’re sweet, fragrant, and fully ripe. Frozen blackberries are equally welcome. They make it possible to enjoy this pie whenever the craving strikes, even when summer feels a long way off.
Six cups fill a nine-inch pie generously. Let the berries tell you what they need: especially sweet fruit may want only the planned amount of coconut sugar, while extra-tart berries can benefit from a little more. Handle fresh fruit gently after drying it; if you’re using frozen berries, mix them while still frozen so they don’t collapse into a bowl of juice before the pastry is ready.
Lemon: Bright, Fragrant, and Beautiful
If you love lemon as much as we do, this pie has a little something special waiting for you. Two tablespoons of finely grated lemon zest introduce fragrant citrus oils, while fresh lemon juice adds a lively tartness that complements the berries. One of our favorite little baking techniques is rubbing the lemon zest directly into the coconut sugar before mixing the filling. The gentle friction releases the lemon’s aromatic oils, creating a beautifully fragrant sugar that spreads its citrus flavor throughout the pie. It’s a small detail that makes a delicious difference.
Blackberry Liqueur or Brandy: A Lovely Little Accent
Just a tablespoon of blackberry liqueur adds an extra dimension of fruitiness and a little richness to the filling. Brandy is another beautiful choice, offering a warmer, slightly more mellow character that pairs wonderfully with blackberries and cinnamon. Neither should overpower the fruit. They’re simply there to make the flavors feel a little more layered and special. Prefer to skip the spirits? A splash of blackberry juice makes a lovely alcohol-free alternative.
Choosing blackberry juice instead gives the filling a completely alcohol-free direction. The fruit, lemon and cinnamon still carry all the essential character of this pie. If you choose liqueur or brandy, remember that baking does not reliably remove all the alcohol; describe and serve it accordingly.
A Golden, Flaky Pastry Makes Everything Better
The lattice gives this pie its familiar, irresistible personality. Golden strips of pastry show off the purple-black filling and let steam escape as the fruit thickens beneath. For easy weaving, keep the vegan pastry cold, roll gently and return it to the refrigerator if it becomes too soft to handle. A simple full top works beautifully too—just cut a few vents where you can see the fruit bubble.
Your favorite reliable vegan double-crust pastry is a lovely starting point. A ready-to-roll vegan pastry can be a practical shortcut for a busy day; check the ingredients if you’re accommodating dietary preferences. If you choose a gluten-free pastry, expect a different feel while rolling and weaving, and use parchment to support the strips if they are delicate.
Little Secrets for a Beautiful Blackberry Pie
One small technique has an outsized effect: rub the finely grated zest into the coconut sugar before you mix the filling. The sugar becomes beautifully fragrant, and the zest spreads more evenly through the fruit instead of gathering in a few bright pockets. Whisk the cornstarch thoroughly into the sugar so there are no dry clumps when the blackberry juices begin to thicken.
The most important baking cue is not simply a golden edge or a timer. Look through the center of the lattice for thick blackberry juice actively bubbling. That visible movement tells you the fruit filling has reached the heat it needs to set as it cools. If the edges brown sooner, shield them loosely with foil rather than pulling the pie from the oven too early.
Cooling matters just as much as baking. Give the pie at least three to four hours on a wire rack before cutting for slices that hold together. It’s a lovely excuse to enjoy the aroma while the filling settles, rather than rushing a perfectly good pie into a very juicy puddle.
How to Serve Blackberry Lemon Pie

A slice is beautiful all on its own, but cool vegan vanilla ice cream beside a slightly warm slice is especially inviting. A spoonful of coconut whipped cream works, too. Set out fresh blackberries if you have a few to spare, and let the pastry and fruit be the center of attention.

Make It Ahead and Enjoy Every Slice
You can prepare the vegan pastry ahead of time and keep it chilled until you are ready to assemble. Mix the filling shortly before it goes into the crust so the berries do not release too much juice while they wait. Baking the whole pie earlier in the day gives it enough time to set without adding anything to your last-minute plans.
Once it has cooled, cover and refrigerate any leftovers. They are best enjoyed within three to four days. Chilled slices bring a firmer filling; a very gentle warm-up softens the pastry and wakes up the lemon aroma. Add ice cream at serving time, not before storing the pie.
Worth Every Bramble
A beautiful fruit pie doesn’t need to be fussy. Ripe berries, a little fragrant citrus and a golden pastry crust have a way of turning a simple afternoon into a memory worth savoring. Whether the blackberries came from a bramble patch or your favorite market, may this pie bring plenty of sweetness to the table and another good reason to linger together.

Ingredients
Equipment
Method
- Chill the prepared vegan double-crust pastry. Roll one dough portion into a circle about 12 inches wide and 1/8 inch thick. Set it into a 9-inch pie dish and refrigerate while preparing the filling.
- Gently rinse fresh blackberries as needed and dry them thoroughly. Keep frozen berries frozen until mixing.
- Preheat the oven to 425°F (220°C) with a rack in the lower third. If using a metal pie plate, prepare a rimmed baking sheet. Avoid setting a cold glass or ceramic pie dish on an already preheated baking sheet.
- Rub the finely grated lemon zest into the coconut sugar until intensely fragrant. Whisk in the cornstarch, cinnamon and salt until evenly dispersed.
- Toss the blackberries gently with the lemon-sugar mixture, fresh lemon juice and blackberry liqueur, brandy or blackberry juice. Spoon the coated berries and any juices into the chilled pastry.
- Roll the second dough portion to approximately 1/8 inch thick. Cut strips approximately 3/4 inch wide and weave a lattice over the filling. Trim, tuck and crimp the edges. If using a full top crust, cut several steam vents instead.
- Brush the pastry lightly with plant milk if desired, then refrigerate the assembled pie for 15–20 minutes.
- Bake at 425°F (220°C) for 20 minutes on the lower rack.
- Reduce oven heat to 375°F (190°C) and continue baking about 40–55 minutes, until the pastry is golden and the thick blackberry juices actively bubble in the center of the lattice. Allow about 10–15 additional minutes for frozen berries, if needed. Shield the edges loosely with foil if browning too quickly.
- Place the baked pie on a wire rack and let cool completely for at least 3–4 hours before slicing, allowing the filling to thicken and settle.
- Cut the pie into 8 slices. Serve alone or with vegan vanilla ice cream or coconut whipped cream, if desired.
