A pink strawberry filling, a nutty date crust and fresh berries on top make this freezer pie a cheerful dessert to bring to the table. Coconut cream softens the fruit’s sharpness, lemon keeps the flavor bright, and the crust gives each cold slice a little chew and crunch. There is no oven to manage, but there is a freezer to plan around.

The filling gets its sliceable structure from freezing. Strawberries contribute water as well as flavor, and coconut cream alone does not guarantee a firm refrigerator-set pie. Start with thick chilled coconut solids, blend until smooth, and give the assembled pie at least six hours to freeze throughout. A short softening period before serving makes the texture easier to enjoy.

Build a Crust That Holds Together

Process the almonds, pecans, chia seeds and salt finely before adding the pitted dates and vanilla. Pinch a little mixture between your fingers: it should hold together when pressed. Dates provide the sticky element, while the nuts give the crust body. Press firmly across the base and up the sides of the tart pan so there are no loose, crumbly patches.

Even thickness matters more than a perfectly sculpted edge. A crust that is very thick in one spot and thin in another will slice unevenly. Chill it in the freezer while making the filling. This brief pause makes assembly easier without adding another cooking stage.

Use the Thick Part of the Coconut Cream

Chill the coconut cream can overnight, then measure one cup of thick solids, leaving watery liquid behind. The amount of solid cream varies by brand, so have a second chilled can available. Save the liquid for another use. Sweetened cream of coconut is a different product and will change both sweetness and the filling.

Dry the washed strawberries before blending so you do not add unnecessary surface water. Blend them with the measured cream, maple syrup, lemon and vanilla until the filling is smooth. A few raspberries can add a sharper berry note, or the optional beet powder can deepen the color. Neither replaces the freezer-setting step.

Cold Slices, Fresh Finish

Freeze until the center is firm, preferably overnight. Before serving, let the pie stand just long enough for a knife to pass through cleanly, checking after ten to fifteen minutes. Room temperature and freezer temperature both affect this, so test the texture rather than waiting for one exact minute.

Add the sliced strawberry garnish and optional mint just before serving. A warm knife wiped clean between slices gives a more polished edge. For a dressed-up plate, add a little coconut whipped cream or vegan dark chocolate sauce; these are optional accompaniments and change the final nutrition. A simple fan of berries is already enough to make the pink filling look lovely.

Make It Ahead and Keep It Frozen

This is a useful dessert to make the day before a meal. Keep it covered in the freezer, add fresh garnish only to the portions you serve, and return the remainder to the freezer. Storing the whole pie in the refrigerator can leave it too soft to slice. If a slice is very hard, give that portion a little more softening time rather than thawing the entire pie.

Cashews can replace the pecans for a different nut flavor, and agave can replace maple syrup. The almonds remain, so a cashew substitution does not remove tree nuts. One of eight slices, including the measured berry garnish, is estimated at 330 calories, 6 g protein and 6 g fiber. Nuts and coconut cream contribute much of the richness; brands and the thickness of the cream affect the estimates.

  • ¾ cup raw almonds
  • ¾ cup raw pecans
  • ¾ cup Medjool dates pitted
  • 1 tablespoon chia seeds
  • ¼ teaspoon sea salt
  • ½ teaspoon vanilla extract
Filling
  • 1 cup coconut cream thick chilled solids; see Notes
  • ¼ cup maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 cup fresh strawberries hulled and dried
Garnish
  • ½ cup fresh strawberries thinly sliced
  • fresh mint leaves ; optional

Method
 

  1. Process the almonds, pecans, chia seeds and salt until finely ground. Add the dates and 1/2 teaspoon vanilla and process until the mixture holds together when pressed. Press firmly into the bottom and sides of a 9-inch tart pan. Place in the freezer while making the filling.
  2. Measure 1 cup thick chilled coconut cream solids, leaving any watery liquid behind. Blend with the maple syrup, lemon juice, 1 teaspoon vanilla and 2 cups strawberries until smooth.
  3. Pour the filling into the crust and smooth the top. Cover without touching the filling and freeze for at least 6 hours, preferably overnight, until firm throughout.
  4. Let the pie stand briefly at room temperature until a knife can cut it cleanly, checking after 10–15 minutes. Add the 1/2 cup sliced strawberries and optional mint just before serving. Return the remaining pie to the freezer.

Coconut cream: Chill a 13.5-ounce can of full-fat coconut cream overnight before starting. Measure 1 cup of the thick solids; the yield varies by brand, so have a second chilled can available if needed. Save the watery liquid for another use.
