Rich dark chocolate and bright cherries meet in a softly set mousse, lightened with whipped aquafaba and a little coconut cream. Spoon it into small glasses and let the cherries bring their lovely tart edge to each chocolate-rich bite.

A spoonful of this mousse begins with dark chocolate, then lets the cherry’s tartness come through. Coconut cream rounds the cocoa without covering the fruit, and whipped aquafaba gives the softly set mixture some lightness. Small glasses suit it beautifully: enough room for a generous spoonful, with a few cherry halves catching the light.

We love the way cherries make chocolate feel more vivid. The fruit is gently cooked and puréed, so its flavor runs through the mousse rather than sitting only on top. Lemon brings the cherry into focus, while a little maple syrup softens the sharper edges.

The texture depends on two kinds of structure working together. Aquafaba holds air while the chocolate firms as it cools. Let the chocolate base become cool but still fluid before folding; that small pause protects the foam and helps the finished dessert feel smooth.

Give the Chocolate a Gentle Start

Choose vegan dark chocolate with at least 70% cocoa and a flavor you enjoy eating on its own. A sweeter bar changes the balance and may set differently. Keep the heat gentle and the bowl above the simmering water, then remove it as soon as the chocolate is smooth.

Cool the cherry purée before combining it with the coconut cream and vanilla. Stir that mixture gradually into the chocolate. If the base has become very firm, folding will be difficult; if it is hot, it will deflate the foam. Aim for a soft, fluid mixture that no longer feels warm.

A Bowl of Foam Worth Looking After

Measure the aquafaba before whipping and use a clean bowl. Be patient as the liquid becomes a foam, then look for stiff peaks that hold when the whisk lifts. Add it to the chocolate in several portions, using broad, gentle folds that reach the bottom of the bowl.

The first addition can loosen the chocolate base; the later additions deserve a lighter hand. The exact number of strokes matters less than avoiding heavy stirring. Stop when the mixture is evenly colored, rather than chasing every last streak at the cost of its air.

Cherries, Berries and a Little Contrast

Pitted frozen cherries save preparation time and make this a lovely dessert beyond cherry season. Cook them until softened and juicy, as you would fresh cherries. Raspberries offer a sharper variation; strain their seeds if a silky finish matters to you.

Optional chocolate shavings add a delicate crunch, while vegan coconut whipped cream makes a richer finish. Neither is needed to complete the mousse. For a more polished presentation, chill the glasses ahead and add the cherry garnish just before serving so it stays fresh.

Let the Refrigerator Finish the Work

Give the mousse at least two hours to chill, then check that it holds a soft spoonable shape. The planning time is a starting point; a deeper glass or a base that began warmer may need longer. A loose mousse needs more chilling before you decide that anything has gone wrong.

This is a welcoming make-ahead dessert because most of the work happens before anyone arrives. Cover the glasses and refrigerate at 40°F (4°C) or below, using them within three days. Keep them chilled for serving; reheating melts the chocolate structure.

A Small, Chocolate-Rich Finish

Cherries bring fruit, fiber and their distinctive sweet-tart flavor; cocoa contributes richness, and coconut cream supplies fat that makes the mousse feel rounded. Its pleasure is in the contrast, without needing a grand nutritional promise.

Serve after a vegetable-rich dinner or bring a tray of small glasses to the table for everyone to choose. A little care with the temperature and folding earns more than elaborate decoration. The cherry and chocolate already give you a beautiful finish.

Ingredients

Mousse
  • 1 cup cherries pitted; Fresh or frozen.
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 200 grams vegan dark chocolate finely chopped; 70% cocoa or darker; verify dairy-free ingredients.
  • ¼ cup coconut cream
  • ¼ cup aquafaba Measure the liquid from cooked or canned chickpeas before whipping.
  • 1 pinch sea salt
Optional garnish
  • fresh cherry halves Optional.
  • vegan dark chocolate shavings Optional.
  • vegan coconut whipped cream Optional.

Equipment

  • Small saucepan
  • heatproof bowl
  • blender or immersion blender
  • Hand Mixer
  • spatula
  • four small serving glasses

Method

  1. Put the cherries, lemon juice and maple syrup in a small saucepan. Cook gently for 3–5 minutes until softened and juicy. Blend or puree until smooth, then let cool.
  2. Melt the chopped chocolate in a heatproof bowl over gently simmering water, keeping the bowl above the water. Stir until smooth, then remove and let cool slightly while it remains fluid.
  3. Stir the coconut cream, cooled cherry puree and vanilla together. Gradually stir this mixture into the melted chocolate until smooth. Let it become cool enough that it will not warm the whipped aquafaba, while still soft enough to fold.
  4. In a clean bowl, whip the measured aquafaba with the salt to stiff peaks. Fold it into the chocolate mixture in several additions, using gentle strokes to preserve as much air as possible.
  5. Divide among four small glasses or dishes. Cover and refrigerate for at least 2 hours, until the mousse holds a soft spoonable shape. Allow longer if it is still loose.
  6. Add any optional cherry halves, chocolate shavings or vegan coconut whipped cream shortly before serving. Serve chilled.

Notes

Chocolate: Use vegan dark chocolate with at least 70% cocoa; sweeter chocolate changes both sweetness and firmness.
Texture: Keep the melted chocolate fluid but cool before folding. A hot base collapses the foam, while a cold solid base can turn grainy.
Aquafaba: Measure liquid before whipping; a clean bowl and patient whipping help it hold peaks.
Timing: The 140-minute estimate includes the minimum two-hour chill, but cooled puree and a fully set mousse may need longer.
Swaps: Raspberries offer a sharper berry flavor in place of cherries; strain seeds if you prefer a smoother finish.
Serving: Small glasses and a few cherry halves make a simple, elegant dessert; optional toppings are separate from the nutrition baseline.
Storage: Keep covered and refrigerated at 40°F (4°C) or below and use within three days. Do not reheat; warming melts the chocolate structure.
Nutrition: Estimates are for one-quarter of the mousse without optional toppings, using Divine 70% vegan dark chocolate and a low-salt OGGS aquafaba reference. Your chocolate and chickpea liquid can change the values.
