Creamy Vegan Lemon Bars with Almond Crust

A small lemon bar can brighten an entire afternoon. These creamy vegan lemon bars pair a golden almond crust with a smooth, pale lemon filling that tastes both tart and rounded. Fresh zest gives the citrus aroma somewhere to linger after the first bright bite.
The filling sets without eggs, using coconut milk and cornstarch for a soft, sliceable texture. The crust is baked on its own, then covered with the cooked lemon mixture and chilled. Most of the elapsed time belongs to cooling and refrigeration, which makes this a lovely dessert to prepare ahead of a gathering.

A crust with a gentle almond character
Fine blanched almond flour gives the base its tender, lightly nutty flavor. A little certified gluten-free oat flour helps bring the texture together. Melted refined coconut oil and maple syrup bind the mixture, while vanilla and salt round out the flavor. Refined oil keeps the coconut aroma more restrained.
Press the mixture evenly into the lined pan, including the corners. An uneven base leaves some bars with a thick crust and others with a fragile patch underneath. The mixture should be compact rather than loosely scattered. Bake until the edges are golden and the surface looks set, then keep it warm while you finish the filling.
Almond flour is central to this crust. A cup-for-cup swap with wheat flour or another gluten-free flour changes its fat content and structure, so use a recipe designed for that flour if a nut-free dessert is needed. The parchment overhang makes lifting the fully chilled slab much easier.
Bright lemon, smoothly set
Stir the canned coconut milk thoroughly before measuring so the thick cream and thinner liquid are evenly combined. Full-fat canned milk provides the body intended here; a carton beverage is much thinner. Lemon juice brings acidity, maple syrup balances it, and finely grated zest carries the fresh citrus aroma.
Whisk the cornstarch into the cool filling ingredients before heating. Starch clumps when it meets hot liquid unevenly, so this first whisk is worth doing carefully. Heat while stirring until the mixture thickens and reaches the gentle bubbling stage described in the method, then cook briefly to finish the starch. A long hard boil is unnecessary.
Pour the hot filling over the warm baked crust and smooth it while it is still workable. The color will be naturally pale because the recipe contains no egg yolks or added coloring. A bright yellow appearance is not a test of lemon flavor; the juice and zest do that work.
Give the bars their full chill
Cool the pan, then refrigerate for the full time in the recipe. The filling firms as it cools, and the crust becomes easier to cut neatly. Trying to hurry the process can produce a soft edge and a messy lift, even when the filling has been cooked correctly.
Lift with the parchment and use a clean, sharp knife, wiping the blade between cuts. Sixteen small squares make a pleasant dessert portion with tea or coffee. Their rich almond and coconut ingredients give them a satisfying texture, so a small piece can feel complete without a coating of sugar or an elaborate garnish.
Keep the bars covered in the refrigerator and serve cool. The filling softens in a warm room, so bring out the amount you plan to share and return the rest to the refrigerator. Use within four days. A plain white plate shows the layers beautifully and leaves the lemon itself at the center of the occasion.

Ingredients
Equipment
Method
- Heat the oven to 350°F. Line an 8-inch square metal pan with parchment across the bottom and up two sides, leaving an overhang.
- Mix the almond flour, oat flour, melted coconut oil, 3 tablespoons maple syrup, vanilla, and 1/4 teaspoon salt until evenly moistened. Press firmly into a flat, even layer in the pan. Bake for 16–18 minutes, until the edges are lightly golden.
- While the crust bakes, whisk the coconut milk, lemon juice, 1/2 cup maple syrup, cornstarch, zest, and 1/8 teaspoon salt in a saucepan while cold, breaking up every starch lump.
- Cook over medium heat, whisking constantly and reaching into the corners, for about 5–7 minutes. When thick bubbles break through the center and the mixture is thick enough to leave whisk tracks, reduce the heat and whisk for 1 minute more. Remove from the heat promptly.
- Pour the hot filling over the warm baked crust and smooth it into an even layer. Cool on a rack for about 1 hour, until no longer warm, then refrigerate for at least 4 hours or overnight.
- Lift out with the parchment and cut into 16 bars with a sharp knife, wiping the blade between cuts. Serve chilled.
