Crispy Air-Fryer Zucchini Fries with Smoky Cashew Dip

Golden zucchini fries meet a creamy smoky cashew dip in a snack that is fresh, crisp and wonderfully shareable. A gentle salt-and-dry step keeps the zucchini from steaming, while gluten-free crumbs add crunch. Set out a platter with lemon wedges and watch how quickly the fries disappear.

A snack that belongs at the center of the table
Zucchini has a gentle sweetness that gets lost when it is buried in heavy batter. These fries let the vegetable stay itself: tender inside, golden around the edges, and just crisp enough to make a wonderful partner for smoky dipping sauce. Serve them in a generous pile with lemon wedges for a relaxed appetizer or a bright side with dinner.
The water is the real challenge
Fresh zucchini holds a surprising amount of water. In a hot air fryer, surface moisture can create steam exactly where you want crunch. A short salt-and-rest step followed by thorough towel drying is the useful move. Slice the sticks evenly and keep the coating light; a thick wet shell does not make a better fry.
A coating in three small steps
Cornstarch helps the wet chickpea mixture adhere, and gluten-free crumbs give the outside its textured finish. Almond flour rounds out the flavor, but a second layer of crumbs can take its place for a nut-free variation. Make sure each stick looks distinct and lightly covered, not fused into a doughy coating, before it enters the basket.
Why air fryer space is worth protecting
An air fryer makes its crisp edges through moving hot air, so space is an ingredient in its own way. Fry in two batches rather than piling sticks over one another. Turn once, then let them finish without excessive basket shaking. The beautiful part is that every fry cooks into a tender center with a lightly toasted shell.
The smoky dip is more than a side note
Soaked cashews blend with lemon and smoked paprika into a creamy, dairy-free dip with a little depth. Its cool texture is especially satisfying beside hot zucchini. If you are serving guests, blend the sauce first and keep it chilled, then fry the zucchini at the last moment; steam and waiting are the two greatest enemies of this platter.

Ingredients
Equipment
Method
- Pour boiling water over raw cashews and soak 20 minutes, then drain. Set aside for the dip while preparing zucchini.
- Cut zucchini into evenly sized 1/2-inch sticks. Toss with salt in a colander and rest 10 minutes, then press very thoroughly dry with clean towels.
- Set up three shallow bowls: cornstarch in the first; dairy-free milk whisked with chickpea flour in the second; and gluten-free panko, almond flour, garlic powder and smoked paprika in the third.
- Coat each zucchini stick lightly in starch, dip in chickpea batter and press into crumbs. Arrange coated sticks on a plate while preheating the air fryer to 400°F.
- Place sticks in a single layer in the air fryer with space around them and spray lightly with oil. Air-fry 9–10 minutes, turning gently midway, until coating is browned and zucchini is tender. Repeat for the remaining batch; do not overcrowd.
- Blend drained cashews with 1/3 cup hot water, lemon juice, smoked paprika, garlic powder and salt until velvety, adding a little more water only if needed.
- Serve the warm zucchini fries immediately with smoky dip and lemon wedges. Avoid covering the plate because trapped steam softens the crumb.
