Crunchy oat-and-pistachio clusters are bound with maple syrup, sunflower seed butter, and ground flax, then finished with dairy-free dark chocolate and dried cherries. Press the mixture firmly before baking and let it cool untouched so the clusters keep their shape. Delicious eaten by hand or scattered over plant-based yogurt.

Chewy dried cherries, golden pistachios, and little flecks of dark chocolate make these oat clusters feel like a bakery treat tucked into a snack jar. Maple syrup and sunflower seed butter help every fragrant, toasty piece hold together for a lovely afternoon pick-me-up or breakfast topping.

A snack with little pockets of delight

The best clusters invite a second nibble: a toasted oat edge, a chewy cherry, then the deep richness of dark chocolate. Pistachios add a beautiful green-gold color and a delicate crunch. This recipe gathers those pleasures into generous irregular pieces that feel a little more special than a scoop of ordinary granola.

Binding granola is a matter of patience

Maple syrup alone will not hold every oat flake together forever. Sunflower seed butter adds body, and ground flax helps make the mixture cohesive. Pressing firmly into a pan gives all those ingredients contact with one another. The slab should be allowed to cool before it is broken; warm granola is far more fragile than it looks.

Chocolate belongs at the finish

Baking the chocolate together with the oats would change its texture and could dull the flavor. Instead, add chopped chocolate as the granola cools, pressing gently so the pieces cling. The fruit goes in at the same moment, keeping the dried cherries soft and bright against the toasted base.

Keep the pieces pleasantly imperfect

This is not a brittle candy bar. Some pieces will break into big clusters and others into little handfuls, and both are lovely. For a tidier portion, score the slightly cooled slab gently before chilling; for a more rustic jar, break it apart naturally. Store it dry and sealed to protect the toastiness.

More than a snack jar

Scatter a cluster over a bowl of plant-based yogurt or fruit, pack a few for a midday nibble, or set them beside coffee when friends visit. Their color makes them especially pretty in a little glass jar, but the real charm is the mix of textures. A batch on the counter can make simple moments feel cared for.

Ingredients

Dry mix
  • 1 ½ cups certified gluten-free rolled oats
  • ½ cup unsalted shelled pistachios roughly chopped
  • ¼ cup pumpkin seeds
  • 2 tbsp ground flaxseed
  • ½ tsp ground cinnamon
  • ¼ tsp fine sea salt
Binder
  • ⅓ cup smooth unsweetened sunflower seed butter stirred
  • ⅓ cup pure maple syrup
  • 2 tbsp neutral oil
  • 1 tsp vanilla extract
After baking
  • ⅓ cup chopped dried cherries unsweetened if available
  • ⅓ cup chopped dairy-free dark chocolate about 60–70% cacao

Equipment

  • 9-inch square baking pan
  • parchment paper
  • Small saucepan
  • mixing bowl
  • measuring cup

Method

  1. Heat oven to 325°F. Line a 9-inch square baking pan with parchment, leaving overhang to lift the mixture.
  2. In a bowl combine oats, pistachios, pumpkin seeds, ground flax, cinnamon and salt.
  3. Warm sunflower seed butter, maple syrup and oil in a small saucepan over low heat just until fluid, then remove from heat and stir in vanilla. Pour over the oat mixture and stir until every flake looks lightly coated.
  4. Press firmly into the prepared pan in a compact even layer using the bottom of a measuring cup. Bake 17–20 minutes until the top is lightly golden and fragrant, rotating once if needed.
  5. Let the slab cool in the pan 20 minutes. Scatter cherries and chopped dark chocolate over the still slightly warm top and press gently; let cool completely, then refrigerate about 20 minutes to set.
  6. Lift the slab by the parchment and break into 12 irregular clusters, keeping larger pieces where they naturally separate. Store once fully cool.

Notes

Clusters that hold: Compact the mixture firmly before baking, then resist breaking it apart while warm.
Chocolate timing: Add chocolate after baking so it softens enough to cling without scorched bits.
Cherry choice: Use soft dried cherries; if very tough, chop finely. Sweetened dried fruit may add sugar beyond the maple syrup.
Nut allergies: Pistachios are tree nuts. A pumpkin-seed-only version needs extra seed volume and a small texture check rather than being assumed identical.
Storage: Keep in an airtight container at cool room temperature up to 4 days or refrigerate up to 2 weeks. Freeze up to 2 months.
Vegan and gluten-free checks: Verify dairy-free chocolate, certified gluten-free oats, and packaged ingredient labels as needed.
Nutrition is estimated for one of twelve clusters, including the chocolate and dried cherries. Cluster size, chocolate cacao percentage, dried-fruit sweetness, and seed-butter brands can change the result.
