Grilled baby potatoes give this creamy potato salad a smoky edge, while celery, cucumber and fresh herbs keep each bite lively. The dressing blends white beans with tahini, mustard, maple and lemon for a smooth coating without mayonnaise. Parboiling the potatoes helps them cook evenly on the grill; drying them before grilling encourages better color. Let the dressed salad rest briefly, then bring it to the table with fresh parsley and a little black pepper.

Grilled potato salad brings a lovely smoky edge to a familiar creamy bowl. Baby gold potatoes keep their tender centers beneath lightly crisp edges, while celery, cucumber, green onions and herbs add cool freshness. The mustard dressing blends white beans and tahini into a smooth coating, brightened with lemon and a little maple.

We love how the dressing settles around the potatoes without hiding their grilled character. Parboiling gives them a head start, so the grill can focus on color and flavor rather than struggling to cook a raw center. A short steam-drying pause makes that second stage more rewarding.

Cook the potatoes just to fork-tender, handle them gently, and let the dressed salad rest for ten minutes before serving. This is one of those dishes where a small pause improves the next bite. Add the final parsley and black pepper when it reaches the table, and let the warm potatoes and fresh vegetables share the bowl.

Tender Centers, Better Grilled Edges

Halve the baby potatoes and simmer until just fork-tender without letting them fall apart. Drain, then give them five minutes to steam dry. A wet surface spends its first time on the grill losing moisture, while a drier one has a better chance to develop the lightly crisp, smoky edge you want.

Toss gently with lemon and the seasonings, then place cut sides against a medium-high grill or grill pan. Give the surface time to color before turning. Grill marks are welcome, but a little uneven browning is nothing to worry about; a tender potato that keeps its shape matters more than a perfect pattern.

Creaminess From Beans and Tahini

Blend the cooked cannellini beans with tahini, stone-ground mustard, maple, citrus, vinegar and seasonings until smooth. White beans make a mild base, tahini supplies richness, and mustard gives both flavor and texture. Together they create a generous dressing without asking mayonnaise to do the work.

Begin with the measured three tablespoons of water and add more a tablespoon at a time if needed. The dressing should pour comfortably enough to reach the potatoes and vegetables. A paste-like sauce tends to stay in a few heavy places; loosening it gently makes a better coating than stirring the salad hard.

Cool Vegetables Against Warm Potatoes

Finely sliced celery, diced cucumber and small pieces of red onion make the creamy bowl lively. Parsley and chives add freshness, while green onions bring a softer onion flavor through the salad. Keep the cuts easy to eat so the potatoes remain the generous center of each forkful.

Fold the grilled potatoes and vegetables with the dressing rather than beating everything together. Let the bowl rest at least ten minutes so the potatoes take up flavor, then add the final herbs. This pause is useful; elaborate garnishing is optional, and a handful of fresh parsley is often the most inviting finish.

A Grill Basket or a Practical Shortcut

A grill basket helps small potato halves stay on the grate and makes turning easier. A grill pan is a good way to make the same dish indoors, with a little less outdoor smokiness. Either route benefits from leaving enough room for the potato surfaces to meet the heat.

The air-fryer alternative uses the seasoned potatoes at 400°F (205°C) for fourteen to sixteen minutes. It offers browned edges with a different character from the grill, so choose the route that fits your kitchen. Make the dressing ahead if helpful and keep it refrigerated; loosening it just before tossing is an easier shortcut than trying to rush the potato texture.

Bring a Creamy Bowl to the Gathering

Potatoes give this salad its satisfying body, while white beans and tahini contribute plant protein and richness. Fresh vegetables and herbs bring variety and crispness. It makes a welcoming side beside grilled vegetables, or part of a lunch plate with other dishes that offer a different texture.

Refrigerate promptly at 40°F (4°C) or below and enjoy within four days. For an outdoor gathering, keep the salad chilled and limit time out to two hours, or one hour above 90°F (32°C). A gentle toss before serving brings the dressing back around the potatoes, and fresh herbs help a saved portion feel like something you have just finished.

Ingredients

For the Grilled Potatoes
  • 2 pounds baby gold potatoes halved
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh lemon juice
For the Salad
  • 3 celery stalks finely sliced
  • 4 green onions thinly sliced
  • ½ small red onion finely diced
  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped fresh chives
  • 1 cup cucumber diced
For the Creamy Maple-Mustard Herb Dressing
  • ¾ cup cooked cannellini beans
  • 2 tablespoons tahini
  • 2 tablespoons pure maple syrup
  • 2 tablespoons stone-ground mustard
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 small garlic clove
  • 3 tablespoons water plus more as needed
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
Optional Finish
  • Extra fresh parsley and cracked black pepper optional

Equipment

  • Large pot
  • colander
  • grill
  • grill basket if useful
  • Blender
  • Large mixing bowl
  • spatula or tongs

Method

  1. Bring a large pot of water to a boil and add the halved potatoes. Simmer for 10–12 minutes until just fork tender but not falling apart.
  2. Drain the potatoes and allow them to steam dry for 5 minutes.
  3. In a large bowl, gently toss the potatoes with smoked paprika, garlic powder, onion powder, sea salt, black pepper, and lemon juice.
  4. Heat a grill or grill pan over medium-high heat.
  5. Place the potatoes cut side down onto the grill and cook for 4–5 minutes per side until grill marks form and the edges become lightly crisp and smoky.
  6. While the potatoes grill, add the cannellini beans, tahini, maple syrup, mustard, lemon juice, apple cider vinegar, garlic, water, salt, and pepper to a blender.
  7. Blend until completely smooth and creamy. Add additional water 1 tablespoon at a time if needed for a pourable dressing consistency.
  8. Add the grilled potatoes to a large serving bowl along with celery, green onions, red onion, parsley, chives, and cucumber.
  9. Pour the dressing over the salad and gently fold everything together until evenly coated.
  10. Let the salad rest for at least 10 minutes before serving so the potatoes absorb the flavors beautifully.
  11. Garnish with extra parsley and cracked black pepper before serving.

Notes

Timing and potato texture: Allow the five-minute steam-drying pause after parboiling and the ten-minute rest after dressing. The total estimate includes the final rest. Parboil only until just fork-tender, so the potatoes keep their shape on the grill.
Grilling: Use medium-high heat. Let the potato surfaces color before turning; a grill basket helps keep small halves from falling through the grate. Air-frying the seasoned potatoes at 400°F (205°C) for 14–16 minutes is the alternative.
Dressing: Start with the measured 3 tablespoons water and add more 1 tablespoon at a time if needed. Cannellini beans give a mild base; stone-ground mustard adds texture as well as flavor.
Serving: Fold the potatoes gently into the fresh vegetables. The ten-minute rest lets them take up the dressing; add the final parsley just before serving.
Storage: Refrigerate promptly at 40°F (4°C) or below and use within four days. Keep chilled for outdoor gatherings and limit time out of refrigeration to two hours, or one hour above 90°F (32°C).
