Moroccan-Inspired Sweet Potato and Citrus Pasta Salad

This pasta salad gives sweet potato a bright, abundant setting. Small rice pasta catches the citrus-tahini dressing, chickpeas bring a soft bite, and orange and pomegranate add little bursts of freshness. Toasted nuts, herbs and warm spices make each forkful feel slightly different.
We love the way cumin, cinnamon and coriander sit alongside the fruit. The spices give the salad warmth without hiding the fresh mint, cucumber or orange. Dates contribute deeper sweetness, while lemon keeps the dressing lively enough for such a generous collection of ingredients.
The flavors are Moroccan-inspired, with plenty of freedom in the salad bowl. Certified gluten-free rice orzo supplies the small pasta shape here. Ordinary couscous is wheat, so the pasta label matters more than the resemblance of the pieces or the name on a recipe.

Roast for Sweetness, Cook for Tenderness
Give the sweet potato room on its tray so the edges caramelize rather than staying wet. Turn once and wait for tender centers with browned corners. These pieces should remain distinct in the salad, so let them cool slightly before folding them through.
Rice orzo varies from brand to brand. Follow its package liquid and cooking guidance, draining unabsorbed broth when needed. A universal pressure-cooker shortcut cannot account for those differences. Taste a piece for tenderness; pasta that is pleasantly firm when warm may become firmer as it cools.
Citrus Keeps the Richness Moving
Tahini gives the dressing body, and lemon and orange juice keep it bright. Whisk in warm water gradually until it becomes silky and pourable. A sauce that looks thick in the bowl can become comfortable once it coats the pasta, so begin with a little and fold gently.
Cut orange segments free of their tougher membranes if you want an especially elegant bite. Catch the juice as you work and enjoy it separately or use a little when adjusting your serving. Fold the fruit in with care; intact segments bring more pleasure than orange juice lost across the whole bowl.
Which Details Can Bend
Golden raisins can replace chopped dates for smaller, tangier bursts of fruit. Pumpkin seeds make a useful alternative to the nuts, changing both richness and crunch. They are also lovely scattered over roasted vegetables, so an opened bag has plenty of other places to go.
The exact herb balance can follow what you enjoy. Mint feels cooler, cilantro more vivid and parsley gives a fresh green foundation. A little arugula, harissa or preserved lemon can be added separately. Preserved lemon is salty and intense; a small amount earns more than a large handful.
Abundance With a Little Shape
Chickpeas contribute protein and fiber, and the pistachios, almonds and tahini bring fat and a satisfying texture. Sweet potato, herbs and fruit give the salad its color and variety. This is a substantial salad rather than simply a few leaves around pasta.
For a special table, use a broad platter and keep some orange, herbs and pomegranate visible on top. Toast the nuts gently until fragrant, then cool before adding them. That last layer gives an immediate crunch while the dressed pasta remains soft beneath it.
A Salad That Travels Well
The salad is enjoyable slightly warm or chilled. For make-ahead meals, refrigerate the components promptly at 40°F (4°C) or below and use within three days. Keep the dressing and toasted nuts separate until serving to preserve the freshest contrast.
If the chilled pasta has absorbed much of the dressing, loosen your portion with a little extra water and taste before adding more salt. Reheating is unnecessary. A cool, citrus-rich salad beside warm roasted vegetables makes a lovely change of pace at lunch or dinner.

Method
- Heat the oven to 425°F (220°C). Toss the diced sweet potatoes with their olive oil, smoked paprika, cumin, cinnamon, cayenne, salt and pepper. Spread on a parchment-lined tray and roast for 30–35 minutes, turning halfway, until tender and caramelized.
- Bring the vegetable broth to a boil with the pasta olive oil, turmeric and salt. Add the gluten-free rice orzo and cook according to its package directions, adding plain water as needed if the package calls for more cooking liquid. Drain any unabsorbed liquid and let cool slightly. Use the package tenderness cue rather than assuming an absorption-grain method.
- Whisk the tahini, lemon and orange juices, maple syrup, dressing olive oil, garlic, cumin, cinnamon, coriander, cayenne, salt and pepper together. Add the warm water gradually within the stated range until silky and pourable.
- Combine the cooked pasta, roasted sweet potatoes, chickpeas, dates, pistachios, almonds, shallot, cucumber, orange segments, citrus zests, parsley, mint, cilantro and pomegranate in a large bowl. Fold gently with the dressing, keeping the orange segments and sweet potatoes intact.
- Serve slightly warm or chilled, with the fresh herbs and nuts distributed through each portion. If preparing ahead, keep the dressing and toasted nuts separate until serving.
