Fresh strawberries are lightly crushed with basil and lime into a beautifully aromatic base, then topped with chilled sparkling water. Bright strawberries, fresh lime, and fragrant basil turn an ordinary afternoon into something lovely. This sparkling ruby-pink cooler is gently sweetened with maple syrup and topped with cold bubbles just before serving—a beautiful, alcohol-free refreshment for sunshine, brunch, or a celebratory table.

A little celebration in a glass

Some drinks bring their own occasion. Strawberries give this cooler a beautiful ruby hue, lime adds a delicious bright edge, and basil brings an unexpected fragrance that feels fresh rather than floral. Pour it over ice, top with sparkling water, and a very ordinary afternoon begins to feel like an invitation to linger.

The best strawberry base starts gently

You do not need an elaborate syrup or a blender for this drink. A muddler or wooden spoon releases the berries’ juice while leaving just enough fruit to see in the glass. Pressing basil lightly releases its aroma; grinding the leaves into dark fragments can make the drink taste grassy and look muddy.

Balance comes before bubbles

Taste the fruit mixture before you add sparkling water. Fresh strawberries vary, and the tartness of lime can shift with the season. A small amount of maple syrup softens the edges without hiding the fruit. Once you are happy with the base, the sparkling water only needs one gentle stir to create a lively drink.

Choose your own presentation

For an elegant brunch pitcher, strain the base and use tall glasses with a clean lime wheel. For a more relaxed gathering, keep the little strawberry pieces and give each glass a small basil leaf. Either way, pour the bubbles at the end. The cooler is alcohol-free, deeply colorful, and inviting for a table with many ages and tastes.

An easy make-ahead ritual

The strawberry-basil base can be prepared earlier in the day and refrigerated. Keep the sparkling water cold and unopened until guests arrive, then build each glass in moments. That small separation protects the fizz and makes entertaining feel easy. When strawberries are out of season, thawed frozen fruit can make a lovely base too.

Ingredients

Strawberry base
  • 2 cups hulled fresh strawberries chopped
  • 8 large fresh basil leaves
  • 4 small fresh basil leaves for optional garnish
  • ⅓ cup fresh lime juice
  • 2-3 tbsp maple syrup to taste
  • ¼ cup cold water
To serve
  • 3 cups plain chilled sparkling water
  • 2 cups ice
  • 4 thin lime wheels optional

Equipment

  • Pitcher
  • Muddler
  • 4 drinking glasses
  • fine-mesh strainer (optional)

Method

  1. Add strawberries, 8 basil leaves, lime juice, 2 tablespoons maple syrup and cold water to a pitcher. Mash with a muddler or wooden spoon just until the berries release juice and the basil smells fragrant; do not pulverize the leaves.
  2. Taste the mixture and add the remaining tablespoon maple syrup if needed, depending on strawberry ripeness. For a smoother drink, strain through a fine sieve; for more fruit texture, leave it rustic.
  3. Divide ice among four tall glasses. Spoon or pour an equal amount of strawberry mixture into each.
  4. Top each glass with about 3/4 cup sparkling water, stirring once gently. Garnish with a basil leaf and lime wheel if using. Serve promptly while lively with bubbles.

Notes

Herb aroma: Press basil gently enough to release fragrance. Aggressive blending or prolonged muddling can make it taste grassy.
Sweetness: Start with 2 tablespoons maple syrup and taste; very ripe berries may need no additional sweetness.
Make ahead: Prepare the berry-lime base up to 24 hours ahead and refrigerate covered. Add sparkling water and ice only at serving.
Texture: Strain for an elegant clear-ish cooler or keep small strawberry bits for a more rustic drink.
Seasonal option: Frozen strawberries can be thawed and used for the base when fresh berries are out of season.
Storage: The finished fizzy drink is best enjoyed immediately; the base alone keeps refrigerated up to 24 hours.
Nutrition is estimated for one of four drinks, using two tablespoons maple syrup in the pitcher. Optional garnishes and extra sweetener are excluded; fruit ripeness, basil size, sparkling water brands, and portions vary.
