Long golden pieces of tofu bring crisp edges and tender centers to these glossy, ginger-scented noodles. Cabbage, carrot and snap peas keep the bowl lively, and a maple-tamari sauce carries just enough chili warmth to make each forkful interesting. Toss gently at the end so the tofu keeps its lovely shape.

Golden tofu, glossy noodles and vegetables that still have a little snap make a lively bowl of supper. Ginger and garlic perfume the sauce; maple softens its chili warmth, and tamari brings the savory depth that carries everything together.

This spicy tofu noodle stir-fry is as much about texture as flavor. Long tofu pieces keep a tender center beneath their golden coating, while cabbage, carrot and snap peas bring color and freshness. Set the bowls out before the final toss—the nicest moment to eat is when the pan has just left the heat.

Prepare the little things first

Stir-frying moves quickly once the vegetables meet the pan. Slice the scallions, shred the cabbage, cut the carrots and trim the snap peas before you start. Keep the scallion whites and greens separate: the whites cook with the vegetables, while the greens finish the bowls.

Whisk the sauce in its own bowl so the ginger, garlic and maple are evenly distributed. The optional tahini makes it a little creamier. Chili garlic sauces vary in heat and salt, so choose one you enjoy and taste carefully before adding more.

Give the tofu room to turn golden

Press the tofu if it needs it, then pat the pieces dry. A light coating of cornstarch helps the surface form a delicate crust. Add the tofu to hot oil in a single layer and give it time before turning; constant stirring works against those lovely golden edges.

A small skillet may need a second batch. That adds time, but it also gives each piece room. Lift the finished tofu out while you prepare the vegetables, then fold it back in gently near the end so the pieces keep their shape.

Let the noodles guide their own timing

Rice noodles differ in thickness and cooking instructions. Follow the package rather than giving every noodle the same number of minutes. Drain them well, rinse if directed, and toss with the measured sesame oil reserved for the noodles.

The sauce and vegetables need only a brief finish together. The cabbage should soften a little while the snap peas stay bright. Add the noodles and tofu, then use tongs or two utensils to lift and turn instead of stirring roughly. A splash of water can loosen a tight tangle.

Keep the bowl flexible

The Notes offer summer vegetables and a heartier mushroom-and-kale variation. Cooked sweet potato belongs in that latter version; raw cubes will not become tender in a quick stir-fry. Seasonal swaps are welcome when their cooking needs get a little attention.

If you love a cool noodle bowl too, try our Tofu Noodle Salad with Spicy Almond Butter Sauce. Refrigerate this stir-fry promptly for 3–4 days and reheat to 165°F (74°C), loosening the noodles with a little water. For a gluten-free bowl, check the noodles, tamari, starch and sauces; the recipe contains soy and sesame.

Ingredients

  • 14 ounces extra-firm tofu pressed
  • 2 tablespoons cornstarch
  • 2 tablespoons neutral oil for tofu
  • 3 tablespoons tamari
  • 1 tablespoon sesame oil for sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon rice vinegar
  • 2 teaspoons chili garlic sauce
  • 1 tablespoon fresh ginger grated
  • 2 cloves garlic minced
  • 1 tablespoon tahini optional
  • 2 tablespoons water
  • 8 ounces dry rice noodles
  • 1 tablespoon sesame oil for noodles
  • 2 tablespoons neutral oil for vegetables
  • 3 scallions sliced; white and green parts separated
  • 2 teaspoons sesame seeds
  • 1 cup napa cabbage shredded
  • ½ cup carrots julienned
  • ½ cup snap peas trimmed

Equipment

  • tofu press or clean kitchen towels
  • Large skillet or wok
  • noodle pot
  • colander
  • mixing bowls
  • tongs
  • knife and cutting board
  • measuring cups and spoons

Method

  1. If needed, press the tofu for about 20 minutes before beginning. Cook the rice noodles according to their package directions while preparing the remaining ingredients. Drain, rinse if the package directs and toss with the 1 tablespoon sesame oil reserved for noodles.
  2. Cut the tofu into 1/2-inch-thick slices, then halve each lengthwise into long planks. Pat dry and coat lightly with cornstarch. Heat the 2 tablespoons tofu oil in a wide skillet over medium-high heat. Cook the tofu in a single layer for about 3–4 minutes per side until golden; work in batches if necessary. Set aside.
  3. Whisk the tamari, sauce sesame oil, maple syrup, rice vinegar, chili garlic sauce, ginger, garlic, optional tahini and water until smooth.
  4. Heat the remaining 2 tablespoons neutral oil in a large wok or skillet. Add the scallion whites, cabbage, carrots and snap peas. Stir-fry for 2–3 minutes until just tender and still bright.
  5. Add the cooked noodles and tofu, pour in the sauce and toss gently for 2–3 minutes until hot throughout and evenly coated. Divide among four bowls and finish with scallion greens and sesame seeds.

Notes

Timing and crispness: The 35-minute prep-and-cook method starts with pressed tofu. Add about 20 minutes if pressing is needed, plus extra time for a small-pan second batch. Coat tofu just before frying and leave space between pieces.
Seasonal vegetables: Replace the winter vegetables with 1/2 julienned zucchini, 1/2 cup corn and 1 cup spinach; add spinach near the end. Or use 1/2 cup sliced shiitake mushrooms, 1/2 cup already cooked diced sweet potato and 1/2 cup shredded kale; allow the mushrooms to cook through before tossing. Raw sweet potato will not cook in the short stir-fry time.
Swaps and finish: Tahini is the optional creamy sauce choice. Coconut sugar can replace the maple syrup, dissolved well. Noodles need their own package timing; ordinary soba may contain wheat. Cashews can add crunch, and lime wedges or chili flakes make optional finishes. These extras change nutrition.
Air fryer tofu: Cook at 400°F (200°C) for 12–15 minutes, turning halfway; basket size and browning determine timing. Use the measured tofu oil and avoid overcrowding. A stovetop wok remains the method for the noodles and vegetables.
Allergens and storage: Contains soy and sesame. Choose gluten-free noodles, tamari, starch and sauces for a gluten-free dish. Refrigerate promptly in shallow containers for 3–4 days at 40°F (4°C) or colder; reheat to 165°F (74°C), adding a little water to loosen noodles.
